here...I got that recipe for ya:

2 cups shredded Parmesan, available in tubs near deli -- make sure to get shredded cheese, not grated
4 (6 to 8-ounce) boneless, skinless chicken breasts
4 plum Roma tomatoes or small, vine ripe tomatoes, seeded and chopped
15 to 20 leaves fresh basil, pile leaves, roll then thinly slice -- chiffonade
1/4 cup pine nuts

Roll out a 2-foot piece of waxed paper or foil near the stove top. Heat a large nonstick skillet over medium high heat -- your pan must be very hot when the chicken is added. Pile the shredded cheese on the work surface created with the waxed paper or foil. Season your chicken breasts with black pepper but no salt; the cheese will add enough salt to the taste of the dish. Press the breasts firmly into the cheese. Coat both sides of breasts with as much cheese as possible. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. Set breasts into the skillet and cook 7 minutes on each side, until cheese forms an even, golden casing around the tender chicken breasts.

While chicken cooks, combine chopped tomatoes with basil in a small bowl. Season with salt and pepper, to your taste.

Drain off any excess oil from chicken as you remove it from the skillet.
Toss pine nuts in skillet till golden, drain excess oil on paper towel and toss them into raw tomato sauce

Top chicken with big spoonfuls of raw sauce

And yes, even though you cannot attend, since you offered...the suite bill will come your way! The good news may be however, according to the Disney website, no availability at PP or GC. SueEllen is checking into that for me.

We usually stay offsite but need a package to take advantage of the free kids ticket so it's looking like Disneyland hotel.

But if'n the Beano cannot come....maybe we'll have to pick another date and just go down and watch Cassie skate in San Diego.

Until you've experienced Disneyland with Tim and Beano, you'll never know the pleasures of Chocolate Muffin Day, or Hug a Random Castmember Day, etc. You MIGHT even be foolish enough to touch the chain!

I think I might make my head explode if I tried that, then I couldn't go to Disneyland cuz you gots to have a head to be tall enough to go on any of the good rides.

I may just have to pretend I'm at D'Land; although it's hard to find any similarities between Space Mountain and embalming.

Hey hey!!

My, RJ, you are up bright and early. Ok, just early, 'cause it ain't bright today. We have rain. Again.

Oh, it's OK Beano, I have to put Disneyland plans back on hold also. DH has informed me I cannot go to DL without him and so I cannot proceed until he has his trip to Japan lined out.

He may not realize it yet but here's what I am thinking....Disneyland Toyko! I will stop at nothing to go to Disneyland!! (yeah, you're right, who am I kidding. My husband has me figured out. Darnit. Sometimes its so infuriating. You kid yourself into thinking you have them fooled, but you really don't.)
I will not be deterred!!

I guess if I must sacrifice and go to Toyko Disneyland to make sure my husband goes to Disneyland this spring...I will. That's just the kind of person I am..give, give, give. I am a giver!

A giver who needs coffee!!

Anybody have great, big, fun plans for the weekend??
