I'm going to try and get an Illuminations cruise for our trip in Jan. Our tentative plan is to spend time in Epcot before the cruise. Would it be best to:
a: park at Yacht club, walk to Epcot and back
b: park at epcot, get car and move to yacht club
c: any other better idea.

What do you experts do???

Here's what I would do:

Park at EPCOT.

Walk to the YC dock and enjoy the cruise.

Ask the captain to drop you at the Intrnational Gateway dock after the cruise - that's what the family we shared our cruise did. No problem getting back in - if questioned just tell the CM you need to get back to your car.

Enjoy the walk back through EPCOT. It's actually quite nice (and almost peaceful) to take a leisurely stroll back through the park after the main "crush" of people have raced out.

Best wishes -

P.S. You may have trouble trying to park at the YC/BC depending on what time you get there. Disney strongly discourages guests from parking at the resorts to visit the parks, so even if you are allowed in, you may only get a 3 hour parking pass. IMHO, it's just better to eliminate that possibility and park at EPCOT. Plus, as mentioned, it's kind of fun to walk through the park after a good share of the IllumNations crowd has already exited.
