My family and I went down to WDW Dec 12-16. We stayed at the Beach Club. Here was our itinerary:
Thursday: Hollywood Studios a(am)
Epcot(pm)
Friday: Magic Kingdom
Sat: resort touring to view decorations
After looking at Touring pland predicting that Magic Kingdom was to be a 1.7 on that Friday I was prared for very few people. I was wrong! There were a ton of people in the parks. Following our plan, we were able to do almost everything on our list but I was unprepared for trying to push our way thought the crowds on Main Street to get out!
Althought we visited FLE, I was not impressed. It could have been the numerous people or the walls that were still up but I didn't feel the love. We loved the theming in Adventureland the best, the kids loves magic carpets and got a kick out of Jungle Cruise.
My husband and I loved Epcot and want to go back because we did not have enough of a chance to view the shops and sights in World Showcase with the kids in tow. The Holiday Storytellers were wonderful though. We loved both Helga and Father Christmas.

We were there in mid-December 2010 and I was also unprepared for the large crowds! Not large by Christmas week standards, but certainly way more crowded than I expected and far far larger than, say, our trips in early September. It does help to choose your park days wisely and have a plan going in.

I agree there's tons to see in Epcot but you did a pretty good job given your limited time.
