So I need to make an appetizer for a party NYE. I feel like I make the same old standbys so I'm looking fo something different - maybe something warm... any ideas??

Brandy-Nut Brie



What could be easier?

Ingredients:
1/4 cup brown sugar 60 mL
1/4 cup pecans or cashews, chopped 60 mL
1 Tbsp. brandy or whisky 15 mL
7 1/2 oz. round Brie cheese 235 g
crackers

Instructions:
Get ready ... Stir together sugar, nuts and brandy. Score the top of the cheese and place on an ovenproof platter. Bake at 400 deg.F (200 deg.C) for 4 to 5 minutes, until cheese is softened. Mound sugar mixture over cheese and bake 2 to 3 minutes more until sugar is melted. Serve warm with crackers.
 
I made these for Thanksgiving. They are SO good. I'm not sure what I'd call them because I made up the recipe while I was shopping.

For lack of something better, let's call them Prosciutto Asparagus Puffs.

You'll need:

1 Package of Puff Pastry, thawed
1 Bunch of asparagus
1/4 pound thinly sliced proscuitto
Boursin Cheese

Preheat oven to 425F.

Roll out puff pastry dough until you have about a 14X18 inch square. Cut this into smaller rectangles, approximately 3 inches X 1.5 inches.

Wash and cut asparagus into 1 inch pieces. Disguard the bottom woody section.

You'll be using about a quarter of each of the proscuitto slices per rectangle.

Place a piece of the prosciutto onto the puff pastry rectangle. Top this with a slice of asparagus and a dab of boursin cheese. Roll up the rectangle to make it a smaller rectangle and pinch the edges so the cheese doesn't ooze out.

When you're ready, bake these at 425F for 10-12 minutes until they are golden brown.

My family inhaled these.
 
Another favorite appetizer of mine is Brie and Raspberry in Fillo.

You'll need:

1 package of thawed fillo dough
1 wedge of brie
1 jar of seedless raspberry jelly
Melted butter

Preheat oven to 400F.

Stack about 4 leaves of fillo and cut these into rectangles. Place a dab of brie and a dab of raspberry jelly into the center of a fillo rectangle. Roll this up and pinch the edges to try to trap the cheese. Before you bake these, spread melted butter over the top. This will give them a crisper texture. You can omit the butter, if you like. It's good either way. Bake for 10-12 minutes.

You can substitute strawberry preserves or fig jelly for the raspberry jelly. I've been toying with the idea of using sliced tart apples in lieu of the jelly or preserves the next time I make these.
 

Prosciutto Melon Balls




A very simple elegant appetizer that combines the spicy taste of prosciutto ham with the crisp cool taste of a melon.


  • 1 large cantaloupe
  • 3 ounces of very thinly sliced prosciutto or fully cooked ham
Cut the cantaloupe in half and remove the seeds. Use a melon scoop to scoop out the melon balls. You could also use a teaspoon to scoop out bite size pieces of melon.
Wrap one thin strip of prosciutto or ham around each melon ball and secure with a toothpick. Makes about 30.

Very simple to make.......gets eaten very quickly.

Jalapeno Wraps:
Jalapenos
Cream Cheese
Bacon

4. Wrap one strip of Bacon around Jalapeno and secure with toothpick.

5. Place on baking sheet until bacon is crispy and cooked.

Crab Meat or Cocktail Shrimp Appetizer
Cream Cheese
Crab Meat or cocktail shrimp
Cocktail Sauce

Spread cream cheese around pizza pan
Spread cocktail sauce all over it
Spread crab meat or shrimp on it

Serve with Ritz type crackers

Black bean/Rotel Dip
Cream cheese
Black beans drained
Rotel
Cheddar Cheese

Spread cream cheese in square baking dish
Layer black beans
Pour rotel over it
Cover with cheddar cheese

Bake at 350 until cheese is melted and the dip is hot throughout.

Serve with Fritos

Vegetable Bars

2 pkgs Pillsbury crescent rolls
1 (8-oz) cream cheese
1 cup mayo
1 pkg. Hidden Valley Ranch original salad dressing mix
1 cup fresh broccoli flowerets
1 cup grated carrots
tomato

Press crescent rolls to cover bottom of a 15 x 11 x 1 inch pan. Bake in a 375° F. oven for 8-10 minutes. Cool completely.

Blend cream cheese, mayo, and dressing mix until smooth. Spread on cooled crust.

Sprinkle vegetables on filling. Press vegetables into filling slightly. Top with bacon bits.

Refrigerate and cut into bars.
 
A variation of the brie and raspberry in phyllo....get the little phyllo cups (sold in the freezer case usually next to the phyllo sheets) and put them on a cookie sheet...add a little jam, a little brie and top with an almond (optional) then bake for a few minutes at 350 until the cheese melts.

I'm making Cheddar Shrimp Nachos

3/4 lb shrimp, cooked and chopped (sometimes I buy the little salad shrimp to skip the chopping)

1 1/2 cups shredded cheddar cheese

1 can (4 oz) chopped green chilies, drained

1/3 cup chopped green onions

1/4 cup sliced ripe (black) olives, drained

1/2 cup mayo

48 tortilla chip scoops

Combine all above ingredients and then drop into tortilla scoops. Place on ungreased baking sheet. Bake 350 for 5 to 10 minutes until cheese is melted. Serve warm.
 
Roasted Garlic and Sun-Dried Tomato Spread

Ingredients
7 Large bulbs of garlic
1½ Tbsp Olive Oil
1½ Pounds softened cream cheese
½ Pound Feta Cheese
3 Tbsp Chopped Fresh Oregano leaves
1 Pound sun-dried tomatoes packed in oil (1½ cups)
1 cup toasted walnuts

Preparation of Ingredients
1. Cut off about the top quarter of each of the garlic bulbs. Sit them on a large sheet of aluminum foil. Drizzle about ½ tsp of olive oil on each. Completely enclose them in the foil and roast in a 450 degree oven for about 45 minutes.

2. Crumble the Feta Cheese.

3. Drain the oil from the tomatoes and chop in a food processor. (Note - these are normally found in the produce section in a grocery store.)

4. Chop the walnuts.

Putting it Together
1. After the garlic has cooled, squeeze out the pulp from each clove into a large bowl. Avoid getting any of the skin in the bowl.

2. Add the cream cheese, blending well. Then blend in the feta cheese.

3. Then stir in the oregano, tomatoes, and walnuts.

4. Refrigerate for at least two hours to one day, covered, before serving.
 
Thanks so much everyone! And all of them are different from what I usually make! One person at the party can't have any alcohol. If I made the brandy Brie what would be a good substitute?

You can probably substitute a jelly of some flavor since the brandy is just being used for flavor, or you can omit it because the brown sugar and pecans should be enough to give a nice flavor to the brie.

This is one thing I enjoy about cooking. I can dream up substitutions, etc., especially when I'm missing a key ingredient. For example, alfredo sauce is very tasty when you make it with coconut milk instead of cream... something I learned when my kids had used up all of my cream without telling me.
 
Yes- I would think it would be fine without the Brandy.It's more to kind of liquefy the mixture a little as it melts. Perhaps a little Apple Juice or something like that?

not sure if it is too late but these were a big hit with my family on Christmas

1 package Lil Smokies
2 packs of Crescent rolls
3 tbs brown sugar
3 tbs honey
1/2 cup chopped nuts ( your choice)
1/2 cup melted butter


Melt the butter and add the honey and brown sugar. Pour into a 9"X13" pan. Unroll and cut the crescent triangles into 3 smaller triangles. ( no right or wrong way, just need them to be smaller to fit the smokies). Roll 1 lil smokie into each of the mini triangles starting with the wide end. Arrange in the pan and bake at 325* for 20 minutes or until browned. I ended up with approximately 30+. But i guess it would determine how big a bag of lil smokies you bought. I also ended up with more triangles then smokies.

These are soo good, i was suprised my kids liked them! I used cashews.
 
This is one of my favs.

INGREDIENTS (Nutrition)
1 (8 ounce) can water chestnuts, halved
1/2 pound sliced bacon, cut in half
1/4 cup mayonnaise
1/2 cup packed light brown sugar
1/4 cup tomato-based chili sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Wrap each water chestnut with a piece of bacon. Place the rolls seam-side down in a baking dish.
Bake in the preheated oven for 30 minutes, or until bacon is crisp and cooked through. Drain off the grease. In a small bowl, stir together the mayonnaise, brown sugar and chili sauce; pour over the bacon-chestnut rolls. Return to the oven and bake for another 30 minutes.

I found it at allrecipes a couple of years ago and always make it this time of year

They sell brandy flavoring--right next to the vanilla in the grocery store.
 
I make something called BLT dip.

If you google BLT dip, I used Paula Deen's recipe. I made it for a tailgate party yesterday and everyone was asking for the recipe.

DH makes these every NYE, mixes in some cheddar and chives, and partially pre-cooks the bacon, so it gets nice and crisp! The are gobbled up!
 
Olive Garden Stuffed Mushrooms (Copycat) Recipe #84696

45 min | 10 min prep

SERVES 4 -6 , 8 -12 mushrooms

8-12 fresh mushrooms
1 (6 ounce) can clams (drained and finely minced, save 1/4 cup of clam juice for stuffing)
1 green onion, finely minced
1 egg (beaten)
1/2 teaspoon minced garlic
1/8 teaspoon garlic salt
1/2 cup Italian style breadcrumbs
1 teaspoon oregano leaves
1 tablespoon melted butter, cooled
2 tablespoons finely grated parmesan cheese
1 tablespoon finely grated romano cheese
2 tablespoons finely grated mozzarella cheese (for stuffing)
1/4 cup finely grated mozzarella cheese (for garnish)
1/4 cup melted butter
fresh parsley (for garnish)
Preheat the oven to 350°F.
Lightly oil a small baking dish.
Gently wash and stem mushrooms; pat dry (Save stems for another recipe).
Combine clams, onions, garlic salt, minced garlic, butter and oregano in a bowl and mix well.
Add Italian bread crumbs, egg, clam juice, mixing well.
Add Parmesan, Romano, and Mozzarella cheeses to the clam stuffing and mix well.
Place approximately 1 1/2 teaspoons of the clam stuffing mixture inside mushroom cavity and slightly mound (You should be able to stuff between 8- 12 mushrooms depending on the size of mushrooms).
Place the stuffed mushrooms in slightly oiled baking dish and pour 1/4 cup melted butter over the top of the mushrooms.
Cover and place in oven for about 35- 40 minutes.
Remove cover; sprinkle the 1/4 cup freshly grated mozzarella cheese on top and pop back in oven just so the cheese melts slightly.
Garnish with freshly diced parsley.
Serve hot.
