Our favorite pesto recipe is Pesto Pepper Pasta:
Slice chicken breast into thin slices or chunks and cook in a bit of oil. Add a few sliced peppers (red, yellow and green mix are really pretty) and sautee until peppers are just cooked through. Meanwhile, boil your favorite pasta shape until done, drain and put several big spoonfuls of pesto in the pot, stir until pasta is coated. Serve pasta with chicken mixture over top and finish with fresh grated parmesan cheese.
