You will stay in the hotel and not be evacuated anywhere else. In fact any empty rooms will immediately be filled with people fleeing the coast.
If the hurricane comes and delays your checkout (as it did ours, our flight was cancelled) they will extend your reservation at a discounted rate. Not a crazy deep discount but about 40%. They extended about Poly GV rate (value season) at $219/night.
As stated above, Disney takes very good care of you. There was certainly no shortage of CMs at the resorts... we were there for Jeanne which was the 3rd hurricane to hit Disney last year, so Disney had it down to a science by then... they sold box meals, encouraged everyone to keep provisions in their room, and showed movies all day. The lobbies in some of the hotels had entertainment and activities. Since the parks were closed, there were plenty of CMs from the parks working the resorts... although I'm sure many went home to be with families others I'm sure were glad to get the hours since the cancelled park days had to dent the paycheck a bit.
If there is a hurricane forecast to hit around the end of your trip, I would encourage you to consider leaving early... the airport will probably close for a couple days and getting out afterward could be tricky. We ended up staying 2 extra nights, which hurt us a bit in the wallet... although the Poly took such wonderful care of us it still felt like vacation, believe it or not.
