...I thought I remember reading somewhere that kids under 3 eat free at Disney. Is that just at buffets? Or at regular sit-down restaurants as well? What would this include?

Our DD will be 1, and she eats almost exclusively soft table food (pastas, veggies, fruits, breads/waffles, etc.), but at this age the hot dogs, PB&J, and chicken nuggets on most kids' menus will NOT do. If we go ahead and order adult meals of pastas or veggies, etc., it will be wasted with the small amount she'd eat.

What do others do with kids this age?

They are free at buffets and pre plated meals. At regular restaurants and fast food places you have to pay if you want a childs meal. There is nothing stopping you from feeding her off your plate though. You can always order pasta for yourself and give her some of yours. That is what we always did anyone with a one year old.
 
she will be free at all buffets. If you order her something off the menu then you will pay for that. I would try to feed her as much as possible off your plates. You could also add a baked potato or fruit cup if needed. We learned when DS was little that many nice sit downs can get you things not listed on the menu such as a bowl of apple sauce or a scoop of cottage cheese. You may or may not be charged for it but you should expect to pay for it. Carring the small plastic containers of friut or a few of the gerber graduate meals might not hurt either. Have a great trip.

At that age we just shared our meals with our little ones. Chop it up fine enough and they can eat most anything in our experience. And as you say she won't be eating much. When our children were little the sitdown restaurants gave a little pack of Dole raisins to tots. That was great. Gave them something to do...picking up those little raisins... and of course staved off their hunger in a healthy way until the food came.
 

This has been of great help to know, for the sake of planning. Seems like the buffets will be great, in having lots of choice, etc., but I didn't even *think* that I would ever be able to order things like applesauce, cottage cheese, etc., if they weren't on the menu -- that sounds like the perfect solution! I don't mind paying for them -- just didn't even think you could get them without buying a complete meal off the menu (e.g., ordering a whole meal just to get the mashed potatoes, for example). You're right, I could also feed her off my plate many times as well. Thanks for the advice!
 
Often times you can just order sides of things and they won't have a problem with that. As long as it is available on the menu they can make an ala carte side from it. On a lighter note, though, maybe you could bring some of those individual applesauce containers with you, or perhaps those packaged toddler meals in the microwavable containers. We took those when DD was 18 months old and used them if we really needed to (places where they really didn't have things she would eat).
 
Just wanted to say you didn't sound cheap to me! At that age a meal can consist of 2 tiny bites. I agree that toting some favorites like Cheerios, juice, and fruit cups is an excellent idea. It'll be good should your baby get hungry while you're waiting in a line. Every full service restaurant we've experienced at WDW had items on the menu that would work. They are a family vacation spot after all.
 
I can't blame you.... no one likes to pay for a full meal for a child who only picks at it. Buffets and family style restaurants are likely your best bets.... some of our favorites for kids are:

Garden Grille
1900 Park Faire, breakfast
Cape May Cafe...dinner
Hollywood and Vine( but alas, it is no more for breakfast and lunch:()
