We've done it both ways. Sometimes sharing a room works, and sometimes it doesn't.
IMO, it mostly it seems to work if the adults can get up/go to bed at exactly the same time. The kids are usually easy, and will readily sleep after a day in the parks.
Adults though tend to require rigid sleep habits to be happy. Problems happen if one person is a night owl (wants to watch tv), and someone else is an early riser.
If you aren't sure though, two rooms is best.
Disney does a good job of giving guests reasons to spend more money, and the more expensive deluxe hotel amenities are a reason to spend more.
I want to add that we also REALLY like the value hotels, especially Pop and AoA! The food courts are great, and both hotels are well laid out. We also like the cheerful décor and atmosphere. For the price, you get a lot of great pluses! We often do split stays and make sure to include the value hotels.
