I JUST found out that I get to attend a conference for work in Orlando YEA!!!! so OBVIOUSLY I'm going to go down early and come back late. the hotel is giving a great deal, so I will be staying there - off property.

I want to make dining reservations, and am looking for your recommendations for out of park dining. I wont be attending the parks every day, so I dont want to pay admission just to eat dinner.

You will find every standard chain of restaurant in the Orlando area -- and I think a few of them may take dining reservations.

However, you can eat in WDW restaurants without park admission. Many of WDW's best and most fun restaurants are in the resorts or in DTD, including character meals.

To name just a few:
Chef Mickey at the Contemporary
California Grill at the Contemporary
1900 Park Fare at the Grand Floridian
Whispering Canyon Cage at the the Wilderness Lodge
Boma at Animal Kingdom Lodge
Spoodles on the Boardwalk
 
Can't help with any "off property" restaurants as we rarely do that. On property (non-park) spots are plentiful--all of DD, plus any of the Signature restaurants in the Disney hotels.
