Non-park days - what to do?

I we just added 2 days to our trip so my parents can join us for a long weekend. We do not plan to get extra tickets, so our 12 day trip will include 2 days we do not go to the parks. One day will be spent off property. What to do the other day? My kids are pretty young and active, and we have a pretty short capacity for the playground and swimming. We are staying at AoA and obviously could move around Disney property. My kids are not into "let's wander around and look at stuff" and we don't want to spend a lot. Suggestions?
 
This past winter we had a 14 night trip and 10 day tickets so we had 4 non-park days with our 3 year old son.
We did an inexpensive lunch at T-Rex, (appetizer tower split between the tree of us) which was fun. We had DDP so we stopped in at Goofy's Candy Co. and got an icee with a snack credit too.
We went to Frozen in the theater one day, which for a matinee wasn't really much more than back home. And the theater was much nicer than what we have in our small town.
Not budget friendly but last year we did Pirates and Pals Cruise out of the contemporary and this year on our off day we will do Hoop-De-Doo.

Also our non-park days were the only days we were back in time for pool-side movies which we just love!
 
Fort Wilderness has tons of things to do. They can take pony rides and go to a sing along bonfire. And keep in mind that no matter how much energy they usually have a few days in WDW can wear anyone out, so they may be more inclined to go with the flow.
 
These are things I have read about here, not done so take that fwiw and I might not have full information. But I throw them out there in case you are interested and want to investigate.

Fishing. You can book a trip on a boat or you can go to Port Orleans Riverside and rent cane poles.

Watercraft. You can rent water craft or parasail (age restrictions on those I think)

Mini golf

Carriage rides. Port Orleans Riverside has carriage rides

You could do an evening show like hoop de Doo

Downtown disney

Ride the monorail, you could look for hidden Mickey's at resorts if that would make it more interesting to resort hop
