We are looking into purchasing non hopper tickets for our upcoming trip, & I was wondering if I am able to buy a 7 day instead of a 6 day & use the extra day to visit a different park in the evening. We are planning to visit one park per day, but on our last day it would be nice to spend the morning in MK & then have dinner in Epcot, but I cannot justify spending the extra $50 per ticket to eat dinner. What are your thoughts?

Ummm, no. Base ticket is one park PER DAY. If you go to MK in the morning, that's one park. You can go back to that same park, but not a different one.

Think about it. Park Hopper is $60 per adult ticket. An extra day on a 5-day or more basic ticket is $10. Do you really think Disney is going to let you in for $10 instead of $60? ;)

And if there was some sort of loophole that allowed this, it would be ALL the talk on the boards. And then be shut down shortly after.

Sorry, it's not allowed. Only PH option will allow you to visit more than one park per day. Perhaps dinner at one of the Boardwalk-area restaurants. You can see some of Illuminations from there, especially from the bridges at either end of Crescent Lake.

No, Disney will not let you use an additional day to park hop. It's one day, one park if you do not have the hopper. Only way you might be able to do this would be if you bought a separate one day ticket to use for the second park, but getting the hopper option would be cheaper.
