Some people have had luck getting permission to order off the Tiffins kids menu at Nomad, emphasis on "some". This is very much a YMMV situation, depending on the server you get and how busy both Tiffins and Nomad are.
Even then, sort of depends on how picky the fussy eaters you mention are. My twins are on board with all the kids menu items at Tiffins (menu available online), but our youngest is autistic with sensory issues and the only thing we could get him to eat was one of the plainest of the types of bread from the bread service from the appetizer menu (our waiter was nice and brought extra of that type for him, but again YMMV). Fortunately, it's disney world, so when we left the restaurant we just walked him over to the nearest food stand and bought him some popcorn as a second "dinner"
