I have 7 day tickets that we won't be using for 1.5 years. However, I wanted to add on the no expiry when we got there. With talk of it being eliminated I am wondering if I can add on the no expiry over the phone or online somehow? These tickets haven't been used yet. I really hope I don't have to use all 7 days this trip. The reason I bought the 7 day is so we could do the no expiry!
Also, does anyone know how much it would be to add that on if I can?

No, you can only upgrade tickets in person.

See the Everything About Tickets sticky thread on the Theme Prks Strategies & Advice board for information about bridging, upgrading, and much more :).

If you bought the tickets from Undercover Tourist, you can return them and order 7 day tickets with the no expiration option.

But they'll charge you a restocking fee, which I believe is 5% of the total order. Based on the current prices for 7-day tickets, that's about $15/ticket for base tickets, $17/ticket for hoppers or WPF&M, and $19/ticket for both hopper + WPF&M.

It might not be worth returning the tickets if the restocking fee exceeds the amount lost by not using the extra days.
