The last time we went - we were on the DDP so our room key was used for everything. This time we are paying OOP for meals - can we still use the room key to charge our CC against the room or do we need to bring cash/CC into the parks for our meals?

Yes you can. Just tell them when you ck in.

If you put a credit card on file at your resort, or a cash deposit, your KTTW (room keys) can be made chargeable. You can then use your KTTW to charge just about anything. There are some kiosks and souvenir vendors that only take cash, so you may want to carry some cash too.
