I'm freaking out here a little! I am now able to make my ADRs (going 12/6-12/13) but I'm not ready! I have an idea of where we would like to eat, but haven't yet exactly figured out which day to go where. If I'm not worried about character meals or CRT, and it is supposedly (lets hope!) a slower week, how soon do I really need to make my ADRs?

As long as you are flexible with times and days and you have a party of 4 or less I don't think you will have too much to worry about. We have made them inside of a month for mid December.

If you were a large party or going at a holiday or during free dining, that would be another story. If you absolutely want a restaurant for a specific day and time I would make it soon.

We just booked Chef Mickey's last week for July 23 at Breakfast. We wanted a late seating. When I told the agent what day we wanted she apologized for not having anything before 10:30. We wanted even later and had our pick of times. So again - if we really wanted an early time I would have booked much earlier but since we were flexible there were still options.

I really have no idea about how hard it will be for you to get your ADRs, but there will be people (like me) that are making ADRs for that time - character meals, regular restaurants, and signature dinning. I made my ADRs from Nov 28th through Dec 13th and had no problems getting what I wanted. I do it at the beginning of the 180 days because I want what I want. If you want to be safe in getting what you want you should try to make the ADRs as soon as you can.
