I've had a couple of cheese and pickle (that's sticky brown, not dill pickle) recently and I'd love to make my own. Does anyone have a good recipe? I'm looking for something not too vinegary, smooth and soft rather than crunchy. DH says Branston pickle is what I need, but I'd like to try a home-made one.

Can anyone help? :)

I would agree with DH - Branston is very suitable to most cheeses however it's more vinegary and crunchy than you're wanting.

I did find this recipe http://www.recipezaar.com/26952 to make your own version of Branston, however it doesn't exactly fit what you asked.

There are two recipes on this page http://www.ellenskitchen.com/bigpots/chutney.html that look promising. I would think a cooked chutney but using some of the spices/seasoning as you would in Branston would give you the sweet, slightly tangy tast and would soften the veggies nicely.

Thanks Babboo. I got some squeezy Branston to try, but it may be too vinegary. The thing with home-made is you can reduce the vinegar, or leave it longer to mellow :goodvibes

I'll try to make one at the weekend and let you know how it turns out:thumbsup2
