If you have never been to Disney please know how absolutely huge it is. When a bus picks you up at a park or resort it takes 10-15 minutes to get to the place you are going. You will not be able to do it all. Bless your heart--here I am, no kids and trying to give advice--my brother and SIL have 5 also--15, 10, 6, 2 1/2 and 8 months.
I am sure others will be able to give you more strategies than I. I would think that with variety of ages you will be pulled in diiferent directions. I would do any and all Parks at rope drop...head back to the resort for nap or swimming..then back out for dinner.
When you enter Epcot get your Soarin' fast pass ASAP--just collect everyones tickets and one person get the pass for everyone. Make a bee-line for that one...if your fast pass is for 12:30, but you need to return to your resort you can come back and use it later in the day.
Share you rmeals. I don't know how big the appetites are but the portions at Disney are ample--you can split a burger and fries.
A Park Hopper Pass with your park tickets will give you the most flexability.
Read the budget board, too. It isn't a cheap trip---but I know there has to be advise for you. Have a great time.
