First off - there are two theaters in both California and epcot. The rumored closing in California would take both theaters down at the same time, but Soarin' out there isn't NEARLY as popular as in Florida. Once they get the movie in California, then they'll schedule the conversion @ Epcot. The do have the option that they could just take down one theater at a time. The lines would be even longer with only one theater going. I wouldn't expect the conversion to take particularly long, since with the exception of the projector(s) it is all software conversion.
If they close down 1 theater in Epcot, standby riders would never get to go on unless Disney reduced the amount of FP+ that people could reserve.
