New itinerary-advice from the WDW Vets please

I just wanted some opinions on this itinerary-is it workable? Dates of travel are 11/15-11/25, travelers are myself, DH, DS 8, and my DMIL only on the weekends, we are staying at the Polynesian.

Saturday-Arrive, settle in, swim and rest up.
Sunday-Animal Kingdom
Monday-MGM
Tuesday-MK
Wednesday-Epcot, we always do ee here because ds loves Test Track
Thursday-Breakfast at Castle and then DH and DS are fishing, basically a free day
Friday-Another free day, PI for the grown-ups
Saturday-Back to Epcot for what we may have missed
Sunday-EE at MK and today is my bday, I know this will be a busy park because of EE but it's my favorite place in the World
Monday-Back to MGM
Tuesday-We have a VERY late flight so we'll be doing DTD and DQ today.

p.s. I am assuming you have UPH or AP's otherwise using a day admission on the Thursday (EE day) for just the breakfast would be my only
