Well, were going to Orlando in may and have not been since 2002 (Too long, I know!), what new rides and attractions should not be missed in :

Busch Gardens
Universal Studios
Island's of Adventure
MGM
Walt Disney World
Epcot

Im sorry I dont know much about Universal, but at wdw I can think of:

Mission Space - Epcot
Soarin -Epcot
Lights, Motor, Action, Stunt show - MGM
Who Wants To Be A Millionaire - MGM
Expedition Everest - Animal Kingdom - Opens This Year.

Im sure there are more, but cant think of any right now.

Trying to rack my brain:
BG- Sheikra (only opened last year),Gwazi,Rhino Rally if like us it was broken on every other trip! Haunted Lighthouse...
MK-Alien Encounter replaced by Stitch's escape (similar theme),Philarmagic (3D show),Pooh's Playground....
MGM-ToT maybe different from your last trip,Stunt show,also heard that Indy show is going to be replaced by a ride a la California
Ep- Soarin' , Mission Space
AK- Everest Expedition (opens this year)
IoA-no change that I can think of
US- Kong replaced by The Mummy
Typhoon also has a new water ride

My new favourites are:

Universal - The Mummy, Shrek
Epcot - Mission Space, Soarin
Magic Kingdom - Philarmagic

Don't really like the new Lights Motor Action at MGM, Stitch's Great Escape at Magic Kingdom.
Think the overall best ride in all of Orlando has to be The Mummy though. Part scary temple, part roller coaster, just all out brilliance. Have fun,

King Kong ride has gone?

Yes I am afraid that King Kong has now been closed, replaced by The Mummy which is an indoor coaster type thrill ride.

i think Turtle Talk with Crush in the Living Seas at Epcot is new since you last visited.

Oh i must be confused, i remember the mummy ride but must of forgot there was no king kong inless there were 2 rides at one point ?

New fireworks displays at MK and SeaWorld and possibly Epcot.

Soarin is a must to ride - Row 1 is the best IMHO
