Hi Jenn, and welcome.
I've never been to POR, but friends stayed there a few years ago with their 2 kids and ADORED it!!!
Give some thought as to whether or not you want the meal plan. It may very well be worth it for you, since the price for the 2 kids is minimal. I know there are a lot of people who don't find it to be a value, but my family LOVES it. We went without it last trip and I hated it. I felt as though we were hemorhagging money-- it got to where I would go into a restaurant and look at the prices before the entrees. Food at WDW is expensive, so you'll want to give this some real thought.
Either way, try to make sure you do at least one or two Table Service meals. The character meals are a lot of fun!
Also, take a look at the Tomorrowland Terrace Dessert Party. This trip will be our 3rd time doing it. (Consider it as a Father's Day gift for your husband??) Aside from the wonderful array of delicious desserts, you get a SEAT for Wishes. Tinkerbell flies literally right over your head. And there's a Photopass photographer there, so you can get some wonderful pictures of your family with the castle as a backdrop-- elevated, so there's no one in the background. This year, it was our Christmas gift to my brother in law and sister in law and their families, who will be joining us at WDW. It can be booked, like ADRs, at 180+10.
(translation: you can book dining 180 days before the start of your vacation, for up to 10 days worth of meals.)
Anyway, enjoy your planning!
