Need Suggestions

Xmas 2010 we are headed to WDW and are renting a house with my sister and her family and my parents . We will be driving to Florida from Oakville, Ontario and will be staying in Florida with my family for 8 nights. My parents have asked if the could take DS8 and DS6 on a Carnival cruise directly after the WDW portion of our vacation . I, of course, have jumped at this opportunity, both for my boys and for DH and I to spend some quality alone time together.

What would you do if you had a week away from your children and were already in Florida with a vehicle, but had to be back in Ontario by the following weekend ? I am looking for all types of suggestions. We will already have done WDW, so I don't think we will be going there again, but other than that, load me up with your suggestions. The suggestions do not have to be limited to Floriday, maybe there is an alternate route home we could take???

What are you interested in?

My wife and I are amature foodies. We love going out to fancy restaurants, and Disney is full of them. It costs virtually nothing to add extra park days to your tickets. If you're thinking about dining at Universal, we had a good time at Emeril's and were blown away by Mythos (inside Islands of Adventure). And I've always wanted to hang out, drink margarita's and sing along at Jimmy Buffet's Margarittaville.

You could also challenge your brain and try and learn something. Kennedy Space Centre is very educational, with lots of different tours to choose from. There are also a variety of different Everglades excursions, depending on your outdoorsy attitude.

If you want to ride all the roller coasters that are too intimidating for your children, go to Busch Gardens Tampa without them!

If you don't mind winter and want to see a little Christmas charm, make arrangements for a romantic getaway, like The Hotel Hershey. They have Christmas and romance packages including 1st class hotel rooms, dining, and spa (with chocolate treatments). There's also lots of outlet shopping nearby.
