need special desserts for July 4th

Does anyone have something really fun, and special for a dessert for July 4th. Don't want another recipe for "the flag cake". Actually, something that will travel well , in the heat, mom-in-law can't have fresh fruit or nuts, something that will make the kids think I'm the world's most clever aunt!!!!!! I don't ask for much do I? Would appreciate any ideas, figured the Disney Board is where the creative minds hang out, right?
 
My grandma always makes poke cake for holidays...

2 baked 9 inch white cake layers
2 cups boiling water
1 pkg. Jello (red)
1 pkg. Jello (blue)
1 tub 12 oz. Cool Whip

Preparation Instructions:
Place layers top sides in in 2 (9 inch round cake pans. Pierce cake with large fork at 1/2 inch increments. Stir 1 cup boiling water into each flavor of the gelatin in separate bowls 2 minutes or until dissolved. Carefully pour red gelatin over 1 cake layer and blue gelatin over the second cake layer. Refrigerate 3 hours. Dip 1 pan in warm water for 10 seconds; unmold onto serving plate. Spread with 1 cup of whipped topping. Unmold second layer, carefully place on first layer. Frost with remaining whipped topping. Garnish as desired. Refrigerate for 1 hour before serving.

It's fun, and you don't see the colors until you cut and serve the cake.

Sometimes we have jello with fruit in it as a light dessert as well... you could do half red, half blue, and either float bananas in it, or even star fruit... Don't forget the whipped cream!
 
What about making rice mellow squares but cut with a star and with red white and blue sprinkles on them.
 
there was a delicious looking red white and blue jello desert in that thing of coupons you get in the Sunday paper...it was a parfait type desert that looked cool and refreshing...oh, in fact I have it right here...so here it is:

Easy American Dessert

4 Cups boiling water

1 pkg (8-serving size) 0r 2 pkg (4-serving size each) Jello any red flavor

1 pkg (8-serving size) 0r 2 pkg (4-serving size each) Jello any blue flavor

2 Cups cold water

1 pkg (10.75 oz) frozen pound cake, thawed and cubed

1 tub (8 oz) cool whip topping, thawed

2 Cups sliced strawberries

Stir 2 cups boiling water into each flavor jello in separate bowls until completely dissolved. Stir 1 cup cold water into each bowl. Pour into separate 13x9 inch pans. Refrigerate 3 hours until firm. Cut jello into cubes. Layer: red jello cubes, cake, whipped topping,strawberries and blue jello cubes in large bowl OR layer in individual parfait or dessert cups and top with additional cool whip. Makes 16 servings
 

How about a cookie or brownie pizza? You could even use a disposable aluminum pizza pan, top with the Patriotic M&Ms or other candy, marshmallows or whatever and drizzle with melted chocolate/white chocolate. It would travel well and the kids would think you're great:D

How about an American Flag cake. Yellow cake(rectangular), covered with cool whip. You put blueberries up the top left corner for the star area and make red stripes with strawberries.
 
OK - this isn't really patriotic but it is fun! Believe it or not it taste really good to adult and kids!

Dirt Cake

1 Pkg. (20 oz.) Oreo cookies
1 8oz. pkg. cream cheese
1/2 stick butter
1 cup confectioners sugar
2 (3oz.) pkgs. instant vanilla pudding
3 1/2 cups milk
1 (12oz.) Cool Whip
Gummy worms

Crush Oreo cookies either by hand or in blender. Set aside. Cream butter, cream cheese and sugar in a bowl. In separate bowl mix pudding powder, milk and Cool Whip. Combine butter mixture and pudding mixture.
Get a NEW pot, like the ones you plant flowers in. You can get plastic ones that look like a terracotta pot. Put one layer of cream mixture and one layer of crushed cookiesand continue like that makiing sure your last layer is crushed cookies. When done you can put a fake plastic flower in the middle and insert gummy worms so they look like they're coming out of the "dirt".
 
we like the dirt cake/cups - but we also make beach cake/cups - using plain grahm crackers or vienna fingers & vanilla pudding & then use drink umbrellas for the beach - so the layers are

top
cookie crumb topping w/beach umbrella
whip cream w/vanilla pudding
vanilla pudding w/cookie crumbs mixed together
cookie crump bottom

and you can use candy balls for beach balls or use teddy grahms on taffy blankets as decoration
