I have a teen who is having gallbladder problems, while we are waiting to see what is going to happen she needs to only eat very low fat foods. I am a terrible cook with no time, (work all day and teach several night classes) can anyone help with some fast low fat recipes? I guess this is budget, because I really don't want to increase my grocery budget if I can help it.
 
Here are a couple recipes I got from "Mr. Food" last month during his healthy cooking week.

No-Fry Honey Chicken
1 cup honey
2 cups cornflake crumbs
1 (2-1/2- to 3-pound) chicken, cut into 8 pieces and skin removed
Salt
Black pepper

Preheat oven to 350°F. Coat a rimmed baking sheet with nonstick cooking spray.

Place honey in a shallow bowl. Place cornflake crumbs in another shallow bowl.

Season chicken with salt and pepper. Dip chicken in honey then cornflake crumbs, completely coating the chicken each time. Place chicken on baking sheet.

Bake 55 to 60 minutes, or until golden and the juices run clear.

(I use boneless, skinless chicken breasts for this recipe. Quick and easy)!

Barbecued Turkey Loaves
Nonstick cooking spray
6 tablespoons barbecue sauce, divided
2 tablespoons water
2/3 cup quick-cooking or old-fashioned rolled oats
2 egg whites, lightly beaten
2 teaspoons chili powder
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1 pound ground turkey breast
1 small onion, finely chopped
1/2 red or green bell pepper, chopped

Preheat the oven to 375°F. Coat a 9" x 13" baking dish with nonstick cooking spray.

In a large bowl, combine 3 tablespoons barbecue sauce and the water. Add the oats, egg whites, chili powder, Worcestershire sauce, and salt; mix well. Add the turkey, onion, and bell pepper; mix well.

Form the mixture into 6 oval-shaped meat loaves, and place in the baking dish; bake for 30 minutes.

Spread the remaining 3 tablespoons barbecue sauce over the tops and bake for 5 more minutes, or until the meat loaves are cooked through and the juices run clear.
 
Hi! I had my gallbladder removed in September of 07 so I hope this will be some help to you. Chicken and Turkey are the only two meats she should eat, the chicken should be grilled or baked, not fried. Applesauce, jello, most fruits (except grapefruits, oranges and avacados). Rice, and most vegetables are okay. For breakfest stick to only oatmeal made with water, she should avoid milk and most dairy. I did this diet for around 3 weeks while waiting to see what the Dr wanted to do. I did lose about 25 pounds so she will lose weight quick with this but she will slowly gain it back after the Dr figure it out. PM me if you need other food suggestions as most recipies will contain things she should not eat.
 
I also had my gallbladder out, this past May. For the month leading up to my surgery I could not eat hardly anything without it causing pain or nausea. I lived on a diet of only fruit, boiled chicken, plain baked potatoes (just salt), plain bread, pasta boiled in chicken broth, toast with jelly only, and fat free english muffins or bagels sprinkled with cinnamon. I agree with the last post and I did lose about 20 pounds, but after I had my surgery and slowly added foods back, which took awhile it came back pretty quickly with a normal diet, DARN!
 

Try doing a search on Devin Alexander. She is the one who makes the recipes for the Biggest Loser Cookbooks. There are a bunch of free recipes online and she tries to take the fat out but put flavor in. There is also a cookbook that shows you how to make an alternative to fast foods. I ended up picking up the family cookbook. She also has some of her shows on one of the cooking channels that maybe your teen could even learn to try to make the recipes and it could help you where you don't have as much time.

That is interesting on the gallbladder. My sister just found out yesterday that she has a gallstone. Not sure what is in store for her yet. Good luck to your daughter.

My reason for pointing these out is, besides that they have a TON of awesome lowfat recipes, you can add the recipes to a shopping list and it totals up the same ingredients needed in multiple receipes....and you just print it out and go.
 
I love the Ziploc and Zip and Steam bags for a veggie dinner. Cut up veggies (squash, zuchinni, eggplant, red peppers into cubes. Throw into bag. Dash in some spices or seasonings. I love the Cavendar's Greek Seasoning. Microwave on high for 6 minutes and a NO fat, tasty dish in 6 minutes with no mess other than a cutting board.
