Need some meal suggestions

I need some help. I will be starting a second job in a couple of weeks which will last until around April 15. I will leave each morning about 7:15 and not return at night until after 9pm. What I need are some one-pot meals that I can put in the crock pot in the AM and the family can just eat as they come in. I have a list started but having a hard time coming up with a variety of foods. My plan is to keep a bowl of salad and a bowl of coleslaw in the fridge so they can just pick the one they want to go with the rest of the meal; but I know they won't heat up cooked veggies so I would prefer the one pot meal type of things that would have some veggies in it.

TIA for any suggestions.
 
Have you discovered the crockpot liners yet? If not, rush out and get some, immediately; they are the greatest invention yet.

I'll look for some of my recipes.
 
Oh, I had forgotten about those! We have used them when doing cheese dips and stuff in the crock pot. Thanks for reminding me!
 
I make pot roast in my slow cooker.

Put a splash of water, broth or wine in the bottom. Salt and pepper the roast and put it in. Put in potatoes cut in quarters, carrots, and an onion cut in quarters. (I was the carrots, but don't bother to peel them unless I need it to look pretty). Put in a bay leaf and you're done.
 

I just put a roast in the crockpot this morning with sliced onions and diced canned tomatoes.(whatever flavor you want) When it's done, we just shred the meat and put into lowcarb tortillas with some shredded cheese and it's so tasty! We do the same thing with a whole chicken too.

Last week I did a roast with one can cream of mushroom soup and 1 pkg lipton onion soup/dip mix and it was really good too!

In the Freezer section at the grocery store there is a line of crock pot meals.

I think they are from Betty Crocker, and are called something like Slow Cookers. There are several variations, my favorite is the chicken pot pie.

I prefer more home cooked meals, but these are great when you are in a hurry! :stir:
 
Check out this blog--a year of crockpot cooking. I've tried a few and they were really good. The recipes are along the left side, and broken down by category. She even included a category of flops.

Minestrone Stew


INGREDIENTS
1 pound ground beef
1 small onion, chopped
1 (19 ounce) can minestrone soup
1 (15 ounce) can pinto beans, rinsed and drained
1 (14.5 ounce) can stewed tomatoes
1 (11 ounce) can whole kernel corn, drained
1 (4 ounce) can chopped green chilies
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

DIRECTIONS
In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a slow cooker. Add the remaining ingredients; mix well. Cover and cook on low for 4-6 hours or until heated through.
 
I've made a roast in the crock pot, yummy!!

I also take either chicken drumsticks or thigh pieces, cover in some barbecue sauce and let that cook all day. It's delicious!

We like to do barbeque pork in the slow cooker. Just put a pork roast in the slow cooker, pour your favorite barbeque sauce on top (we like the Bull's Eye sauces), and sprinkle on a little apple cider vinegar (optional). Then, cook on low for 7-8 hours. Shred the pork with a couple of forks and stir it around to soak up more sauce. Serve on a couple of sandwich rolls. :)
