I'm flying to wdw in June...I booked each way with a different airline to save some money ....on my trip back home I am flying Alaska Airlines...I booked my ticket back in Dec. and since then they have changed my schedule twice...No emails no messages nothing....the only reason I found it was because I logged in the website to check on something....I originally was supposed to fly out of MCO at 5:30 pm and get back to SFO around 7:30...they changed it to leave an hour later getting back at 9:30 pm and then yesterday I saw they had changed it to leave at 4:30 pm getting in at 7:30...I'm fine with this...actually this is not too much different than my original flight...However, I still have 4 months left and I don't want to have them keep changing my flight and end up on my day flying home that I'm wayyyyy off on time...I'm driving and parking my car at SFO and they request a drop off and pick up time...I don't want to tell them something and it be either hours earlier or hours later...any advice on what to do? I need to book my parking pretty soon....

I don't think it matters to them very much - I always book an offsite parking lot and fly from two different major cities and although they also ask for times they have never held me to it.
I just don't think its firm - they will charge you for the length of time you actually park regardless so I would just book based on your flight times today and then if need be adjust the reservation if it changes again.

OT:
If your using DME I would also book that based on todays times, on the inbound as long as your flight is the same day flight time doesn't matter. On the outbound if there are significant changes let DME know at least a day prior to departure.

As long as the flight number stays the same there should not be an issue as DME is connected and can access flight times. They can go in and look to see what time the flight is and schedule your bus accordingly. If when you get the "eviction notice" the day before you leave you notice the times are wrong you can call them then.

Book your parking with the times you have whenever you call. About a week or two out, check the airline. If the times have changed drastically, call and say "my airline changed my flight time. The new times are... " and fill in the blanks.

It's not unusual for an airline to change times, and no, you can't count on them notifying you. Keep checking online.

It's very common for this to happen with flight times this far out. Airlines are constantly adjusting times. It's also common for them not to notify you this far out either. The airline may not notify of changes until a certain point before there flight, could be 120 days, or 90 day out etc. Basically when they firm things up they will send an email alerting you of the changes and will ask if you accept them or not. That's why it pays to check now and then on your own. Most, if not all airlines have a policy that if you flight changes by a certain amount of time they will allow you a free change or even a refund.

I have changed my flights a number of times due to this. One time I booked an early evening flight to the west coast as it was much cheaper then an earlier flight (10am) and I wasn't entirely sure I could get the day off. I got the email that the flight time had changed and by then I knew I could have the time off so I called and then changed me to the earlier flight at no cost.
