Need schedule help!

We are going Saturday 4/18 and fly out Sunday 4/26. doing 5 days disney, 1 day universal and 1 day knotts (a day off in the middle). I am having a hard time planning my days and need some input.

Looks like park hours will vary which is my hang up.

I had planned universal Sunday 4/19 and disney 4/20. But, now it looks like disney will be open til midnight on sunday (only 9pm during the week). I had planned to not be there that day as there would be large crowds from star wars convention. Is it worth the bigger crowds to flip flop those days?

How would you plan it?
Here's what I have for sure planned:
Saturday: disney
sunday: ?
monday: ?
tuesday: ?
Wednesday: ?
Thursday: ?
Friday: disney
saturday: disney
 
Monday doesn't have fantasmic! Or fireworks, will you be ok to miss those Sunday? Would you put in the whole day, or more hours in the park Sunday over Monday to make up for the crowds? Touring plans has the Sunday at a 7 and the Monday at a 4. Seeing that you will be at disneyland the following weekend I would keep Monday as my disney day. The extra hours are going to be busier and you will likely get the same amount of stuff done.
 
Thanks so much for the educated input. I seriously get so caught up in my brain and options that I freeze.

Turns out that Indiana Jones had appeared on the closure list starting Monday, so that changed all and now we will hit disney sunday in hopes of getting a ride or 2 in before they shut it down.
 
We prefer the longer park hours at Disney as we don't feel Universal is a full day park
