I joined a recipe swap with recipes that have 5 or less ingredients. Who has some good ones they can share? I thought joining this recipe swap would be a good idea because
I have little time to cook and even less time to find those fast and
easy recipes :) Thanks for sharing your recipes with me for quick and easy cooking!

I make a spaghetti sauce that has not much ingredients ...but make it with a few extras and have two types of meals out of it....
two large cans of tomatoes.....then blended
one lb of hamburg browned first in pot
one large can of tomato paste with equal water
mix it all together
in another pot .....cook boneless chicken thighs boil
then add to the pot of sauce......and cook the rest of the day
serve the sauce over pasta......and then you ahve another
meal of chicken caccitore too
make meatballs instead of meatsauce and you could have
meatballs subs too for an extra meal besides the obvious

Here's one of my daughter-in-law's favorites . . .

Candied Carrots

16 to 20-oz. whole baby carrots
1/2 c. butter
1/2 c. packed brown sugar
1/2 c. honey
1/4 t. salt

Place butter and brown sugar in saucepan. Heat until the butter melts, and the sugar dissolves. Add honey and salt. Add carrots, stirring well to coat with the mixture. Cook over low heat until carrots are tender and glaze is thickened and coats all the carrots. This serves 4.

I've been doing low carb for over a year, now, and one of the foods I miss most is this recipe for Mexican Rice. I got it from a recipe e-zine several years ago and have made it many times.

Mexican Rice

Saute chunks of onion and garlic in oil (1/2 onion and 2 or 3 garlic cloves - depending on taste -- we think the more the better !) Add 1 c. long or medium grain rice and cook until almost brown. Add 2 c. HOT chicken broth and a smidgen of tomato sauce or paste (for color). Bring to a boil, turn down heat and simmer 20 minutes.

I guarantee that it will be your favorite Mexican rice! My Notes: Wonderful! And, she’s right! The more onions and garlic, the better! Usually, I quadruple the recipe (x4) and use a 6 oz. can of tomato paste.

And, another favorite I've been missing . . .

Bi-Me

3 pork shoulder steaks, cut into bite size pieces
1/2 head cabbage, cut in shredded pieces
3 oz. spaghetti
Soy sauce to make noodles brown and to desired flavor
salt and pepper to taste.

Brown the pork steaks in a small amount of oil until brown. Put this in a dutch oven size pan and add your cut up cabbage.

While the meat is browning, cook the spaghetti until done. Steam meat and cabbage until cabbage is tender, add cooked spaghetti and soy sauce until noodles take on a brown color and it is done. You can serve with additional soy sauce if you desire. Serves 6-8. Enjoy! My Notes: Wonderful! Just like the house lo mein at my local Chinese restaurant if you add shrimp, chicken, broccoli, mushrooms, carrots, and water chestnuts.

A simple and yummy dessert . . .

Cheesecake Stuffed Strawberries

Take a quart of berries.... cut the bottom tip off of them (so they will stand on a plate) and then gently "core" them. Set them aside.

In a small mixing bowl, place 16 oz of softened cream cheese, 1 c. powdered sugar and 1 t. vanilla. Whip this until creamy (if not stiff enough more sugar may be added until at desired consistency). Place your cheese mixture in a pastry bag or any plastic storage bag (cut the tip off so you are able to squeeze cheese through). Then fill your berries! These are a big hit at a brunch! If you like cheesecake, you will love them! If you’d like, add a squeeze of lemon juice to the cheese mixture..... even better!! A drizzle of chocolate? Be still my heart! Wish I had some to add! Next time.... for sure next time!! OR . . . For even MORE chocolate you could dip the strawberries before you put the cheesecake mixture in them!

Here's one that I use a lot, now that I'm low carbing . . .

Scrambled Eggs to Go

1 dozen eggs
1 lb. sausage (we like spicy)
8 oz. shredded cheddar cheese

Brown and crumble sausage. Let cool, and add eggs and cheese... mix well. Pour into 18 greased muffin tins. Bake at 350° for 30 minutes, or until golden brown.

These are quick & easy, keep well in the fridge, and reheat wonderfully (1 1/2 minutes in the microwave). A good option for people who don't like quiche (like me!), and need something quick in the morning. We have 2 or 3 for a serving (3 muffins = 2 eggs).

Another recipe that I enjoy . . .

Basic Quiche

(I usually double this and put it in a 9x13 casserole dish) It's great for breakfast, lunch or dinner. And it even tastes good cold! But if a micro is handy, I use it!!!!

4 eggs
1 1/2 c. cream (or half and half, but cream has fewer carbs)
2 c. cheese
salt and pepper to taste

Grease bottom of dish with butter. Sprinkle cheese on bottom of pan. Mix together eggs and cream. Pour over cheese. Bake uncovered at 400 for 15 minutes, then lower temp to 350 and bake another 30 minutes. Let cool for 10 minutes before slicing.

Options

I am big on making quiches and putting whatever I'm in the mood for in them. Some good combos are: leftover taco meat with olives and jalapenos. Shrimp, chicken, or imitation crab with asparagus or spinach and mushrooms (Swiss cheese is awesome with that!) Whatever you have left over makes a pretty good quiche.

My Favorite So Far . . .

1 lb. Bob Evans special seasonings sausage; 1 red pepper; 8 oz. mushrooms, sliced; cheddar

Thank you so much for your ideas, especially the low carb ones.
I am watching the carbs and new ideas are always welcome because it can get same-old same-old. If anyone has anymore
please keep adding to this thread--any 5 ingredient recipes low
carb or not. Thanks again!

There have been so many great recipes posted, it has been hard to decide which one to use for the swap. I think I will do the
Peanut Butter Cookies with a Cookie Monster theme on the page,
and I may send a second one to the swap with the Double Decker
Fudge that came through yesterday. Thanks again everyone for
your help. Keep sending the recipes, I love these kind of fast and
easy ones and I can always add to my book when the swap is
over with the additional ones I find here :)

I made PattyT's fruit salsa and it was wonderful. So unique. My mom liked it and my husband liked it too. Thanks for sharing!

The strawberry/cream cheese recipe above reminded me of this yummy, easy recipe that also tastes like cheesecake.

Ingredients: cream cheese, strawberries, brown sugar, cinnamon, Triscuits

Take a block of cream cheese and drudge it in a combo of brown sugar and cinnamon. (I usually slice the block to make it more square shape.) Really crust the cream cheese well. Then slice the cream cheese into thin slices. (Easier with really cold cream cheese.) Place a slice on a Triscuit, place a sliced strawberry on top. Done. It is sweet and delicious and is always gobbled up quickly.

1 Spice cake mix
1 egg white
small can of pumpkin pie filling
(spices already in the pumpkin)

Mix all 3 ingredients. It will be a stiff batter. Put batter in muffin tins lined with cupcake papers. Bake at 350 degrees for 20 to 25 minutes.

These are very moist and low fat. Everyone loves them.
