I just bought a london broil late last week. the sticker said "sell by 6/6". but today i pull it out and it has some brown spots. so i cut those off and marinate it. well i just go to look at it and its getting more brown by the second. is that a reaction to the dark marinade?

I just want to make sure that if I cook this meat Medium, I wont die or get sick from Brown Meat Disease.

TIA!!!

I'm always worried about that. But my mom always just says "smell it". Usually if it *bad* you can tell. But I'm a weenie, and if it's questionable, I just chuck it.

If it was sell by just yesterday, it should be fine, as long as properly refrigerated. Marinade will turn the meat a different color.

Did you do the smell test? If it smells OK, it probably is. Sometimes when meat hits the air, it turns brown.

Someone once told me, however, "When in doubt, throw it out".

Guess I wasn't much help, huh?:p

It seemed to have smelled ok. But the look of brown meat (when I haven't even cooked it yet!!!) is kinda gross. i guess if it still looks nasty after its done, we'll order pizza. ;)

My DH doesn't believe in any of the normal food storage rules...he insists that they were all made up by my mother. He will eat food that has been in the fridge for 3 weeks...of course, HE wouldn't think a thing about eating brown meat. The thing is, he's never ever gotten sick from eating all the stuff that I refuse to eat and refuse to let the kids eat. I find myself hoping that he'll get sick some day so he'll believe that I'm just not making this stuff up.

What was in your marinade?

its Stubbs Beef Marinade with Soy, Lime, Ginger and Red Pepper. Looks good, but this is my first time using it. I'll let you know how it turns out.

The soy will do that! I'm sure you will be fine. Hope you like the Stubbs.

if it smells good, its usually a-okay. The sauce will make it turn brown, so don't let just color scare you =) It's when it kills you over with it's stench that it should scare you =)

Enjoy! We LOVE stubbs at our house!

I'm another fan of when in doubt, throw it out.

No piece of meat is worth a rousing bout of food poisoning.

Heres the Update!!

The meat cooked well and tasted even better. The marinade was great, I definitely recommend it. Now for the side dishes, they didnt fare so well. The lima beans were shriveled and chewy and the rice was crunchy. I guess one out of two aint bad.

So we went to Dairy Queen and got dessert. YUM!!

THANKS for everyone's help!!!!!!! :Pinkbounc :Pinkbounc
