Need meal ideas for vacation condo

We are spending a week in Panama City Beach :yay: in a condo with a full kitchen. I have most meals planned but need ideas for a couple more. They have no grills, so grilling isn't an option. We are having different types of sandwiches for lunch each day, so we don't want any type of sandwich for dinner. I also don't want to bring my crock pot along because we're lugging around so much stuff already.

So, I have a few meals planned that I will prepare at home and freeze....meatballs, steak fajitas, and spaghetti. We also plan on having tacos one night. Help! I need two more nights! Oh, my family also doesn't like frozen meals, like the Stouffer's lasagna.
 
A couple of quick and easy summer meals.

Since you're already making tacos one night why not double up the meat. Then the 2nd night add a can of kidney beans (or black or both) to the meat and serve taco salad. Bag(s) of salad, tomatoes, olives, avocados, taco meat/beans, shredded cheese and tortilla chips. Great summer meal. And any leftover meat, cheese, chips - nachos!

Another salad my family loves is chicken salad. I bake frozen chicken strips (Tyson is the best around here) then cut them into chunks. I serve the salad with the following to be added individually: chicken, mandarin oranges, dried cranberries, sliced almonds, sliced celery, shredded cheese, crunchy chow mein noodles. Good with oil and vinegar, ranch, or asian dressing.

If you want hot meals you can't go wrong with burgers or sloppy jos
 
How about chicken a la king? I have frozen that and then served it over rice.

How about those ham steaks? Those freeze well and can be served with some type of salad...

Homemade pizza? I have seen pizza crusts that don't need to be refrigerated. And then add toppings...

Kraft Sizzling Salads....I know you can't grill the chicken breast, but you could fry them up in a pan. We love these combos and super easy!

We always get a condo at Hilton Head Island when we go there and I cook most meals and only eat out once or twice. We do order pizza one night and pick it up...cheaper than eating in! I usually do spaghetti, salad and bread one night...chicken enchilads, mexican rice, corn and nacho chips and salsa one night...tacos and chips one night...and baked chicken breasts with veggies one night. You could also do bacon, eggs, biscuts, gravy...my folks love that for dinner :) or hot dogs and chili with baked beans.
 

Our last couple of condo nights are always "clean out the fridge" nights. Chances are you'll have leftovers from the other nights. Throw them all on the counter and call it dinner. This is especially true if we've been to restaurants a couple of times and brought home doggie bags.

You could pick up a really cheap grill if you wanted to cook out. Who cares how long it lasts, right? We rent a condo in the summer and there are so many abandoned grills, sand toys and umbrellas.

We actually do this mid-week and then again at the end. Or, we even cook enough for two nights and eat it again a couple night's later.

Other idea:

Breakfast night (pancakes, eggs, sausage or bacon)
Steak and Potatoes night
Sloppy Joes
Pizza

Another hint: I find that condos are not stocked with pans with lids....we take rubbermaid or tupperware and tin foil wrap so that we can store things easily.
