Need Low Carb Ideas and what to do with Shrimp

I need to keep some snacks on hand here at work that are low carb. Any suggestions? Also just to point out I am not big on the Atkins chocolate treats.

The Shrimp - I bought this big and expensive bag of frozen shrimp. What should I do with them?

Hi Amanda!

I just love shrimp!!!!! I make a wicked good shrimp alfredo. Since I'm on South Beach I can have whole wheat pasta and I usually serve it over whole wheat linguine but you could pour it over broccoli too.

I got the recipe from the lowcarbfriends site. It's Olive Garden's alfredo sauce recipe and everyone who eats it, raves about it! We have it for dinner once per week, on Sundays, and my little sis and my son were practically fighting over it this past week. My son even licks his plate when he is done eating his! Enjoy!

ALFREDO SAUCE
Ingredients: 1 Pint Heavy cream
1 Stick Butter
2 Tablespoons Cream cheese

5/8 cup Parmesan cheese -- Shredded
1 teaspoon Garlic powder


In a heavy saucepan, combine butter, cream and cream cheese. Simmer over low heat until melted.

Add parmesan cheese and garlic powder. Simmer over low heat for 20 minutes, stirring occasionally.

While the sauce is simmering I saute the shrimp in butter substitute and garlic powder then add garlic shrimp to sauce for the remaining few minutes of cooking time.

You can then serve over broccoli or some of the Dreamfield pasta. It is delicious!
 
I sautee the shrimp in a little bit of olive oil & butter. When they are no longer translucent, I add a small amount of half-n-half and then put some Frank's Hot Sauce (like they use in buffalo wings). Anyway, it's really good and DH loves it for dinner! Good luck!
 

I buy it when it goes on sale here and stock up. We love shrimp.

I make the Shrimp Scampi.

Saute some minced garlic and red onion on some butter, with a dash of olive oil. The olive oil helps prevent the butter from burning.
Add your shrimp and cook until pink. Then add a dash of lemon juice and worcestershire sauce.

We like the scampi served over a bed of mixed greens..............yummy salad.

I also sometimes make pizzas with it. I use the low carb wraps as the crust. Toast them first, then add your toppings. very good. We usually have pizza this way once a week. And yes, we like shrimp on our pizzas.

As for chocolates, I like the Atkins peanut butter cups. And occasionally I will have a Hershey's sugar free--the little snack size bars. They are pretty good, just don't over do it!
 
I love shrimp! This time of year I frequently grill the shrimp. First thaw and peel the shrimp, then sprinkle with olive oil. then add what you like for seasoning. Sometimes we just use barbeque sauce, other times we saute some garlic, McCormack makes a good creole sauce for shrimp that comes in a bottle, I really like spicy food, so sometimes we use Montreal Steak Seasoning to spice them up. When we grill the shrimp, I also grill veggies. Most of the time when we grill I also grill a chopped onion, either plain with a little olive oil or with whatever sauce we are using.
Other suggestions, shish ka bobs with cherry tomatoes, onions and mushrooms
fajitas, most of the time I don't eat the tortillas but the rest of the family does, I just eat the insides, the shrimp, chopped tomatoes, salsa,chopped shallots,
blackened shrimp on the grill (coat shrimp with olive oil then coat with Konriko spices) that I serve with red beans and rice
Being from Maryland our favorite is to steam the shrimp, put water in the bottom of the steamer, coat the shrimp with Old Bay seasoning, put top on the pan and steam, they are finished when they turn bright red
If I have leftovers, I make shrimp salad, finely chop celery, add pepper and Mayo (I prefer a small amount of real mayo instead of the low fat kind) I then add this to a big bowl of salad. (The deli has good shrimp salad across from work and all this shrimp talk has convinced me of what I want for lunch!)

I am the laziest cook ever, so I live for bags of already cooked tail-off frozen shrimp. (They taste a lot better than they sound, trust me.) I melt butter in a soup pot with teriyaki sauce (the thin, not terribly carby kind by Kikkoman), garlic powder, and dill, then throw in some crumbled (by the food company, not me - that would be too much effort :jester: ) feta and the shrimp. Reduce burner to medium, cook for three minutes. Add cheddar cheese and a bit of cream, and cook for one more minute

Voila! Shrimp bisque! :)

I don't know if you have a Kroger handy, but mine usually has 12 ounce bags of the shrimp for $10.99, buy one get one free.

We have found a couple good treats:

The atkins nacho cheese crunchers..the whole bag is 5 carbs..I can make the bag last 4 servings..lol. They are so crunchy they really do the trick snack wise..you only need a couple.

The atkins salted caramel nut log..very good.

There is a belgian chocolate 1 or 0 carb candy bar (depending on the flavor you choose)..found it at walmart...totally wonderful. Can't remember the name..but, you can't miss it when you see it. The hersheys ones are good, but these are really good.

Macadamia nuts or walnuts.

Also..check foodtv.com..since the low carb chef has started..he makes all sorts of great things food/snack wise. You could bake/freeze and pull one out once in a while.
 
As far as the shrimp...I do scampi or alfredo sauce with them.

The scampi recipe in the atkins book is very good.

The alfredo sauce recipe I use is from the low carb chef on tv...check out foodtv.com. It is so easy...2 T butter, 1 cup heavy cream, 1 1/2 cups fresh grated parm cheese, a little fresh garlic if you want...and a little parsley on top if you want.

Either of these go great over spaghetti squash...it is the perfect pasta replacement. Strings up just like pasta...and is delicious with the alfredo sauce..haven't tried it with a red sauce yet.
