I am going on a beach vacation with a group of friends in early January. There will be 6 adults and 2 children. As one of the only adults who actually likes to cook, I have been designated as one of the main 'cooks'.
I expect we will be going out to dinner most nights (maybe bbqing once or twice, but mainly out), but since our condo isn't in a very touristy area (ie not too many restaurants within walking distance), I think we'll be needing food for at least breakfast, lunches, snacks. Especially things that we can grab quickly and head back to the pool/beach.
Ideally, I would like to cook up a bunch of things on the first night, and have them sitting in the fridge ready to be put together/warmed up by whomever is hungry.
So far, I am thinking:
- Pasta Salad
- Pulled Pork (with a couple of different sauces such as an Asian and a bbq on the side) in the crock pot (ppl can than make it into nachos, sandwiches, etc.)
Although I am a total foody, a few of the adults, and both kids are pretty picky. I'd personally like things a bit more 'gourmet' but I know we need to have things that can appeal to both types.
