Need ideas for quick bfast/lunches for beach vacation

I am going on a beach vacation with a group of friends in early January. There will be 6 adults and 2 children. As one of the only adults who actually likes to cook, I have been designated as one of the main 'cooks'. :confused3

I expect we will be going out to dinner most nights (maybe bbqing once or twice, but mainly out), but since our condo isn't in a very touristy area (ie not too many restaurants within walking distance), I think we'll be needing food for at least breakfast, lunches, snacks. Especially things that we can grab quickly and head back to the pool/beach.

Ideally, I would like to cook up a bunch of things on the first night, and have them sitting in the fridge ready to be put together/warmed up by whomever is hungry.

So far, I am thinking:
- Pasta Salad
- Pulled Pork (with a couple of different sauces such as an Asian and a bbq on the side) in the crock pot (ppl can than make it into nachos, sandwiches, etc.)

Although I am a total foody, a few of the adults, and both kids are pretty picky. I'd personally like things a bit more 'gourmet' but I know we need to have things that can appeal to both types.

Please help with ideas... Thanks!
 
For breakfast, I'd just do cereal/bagels/fruit/breakfast bars, juice and milk.

For lunch, I did a make-your-own-submarine type fixings: deli meat, cheese, lettuce, tomato, onion, rolls, mustard or mayo. You could do salads one day. Then maybe some chicken or beef or black bean quesadillas. Do takeout fried chicken with the fixings one day.
 
We often take a ham, which can be eaten at dinner and then leftovers for ham biscuits and sandwiches later. My sister usually cooks up a couple pounds of taco ground beef, which can be used in burritos, tacos, taco salads, etc. For breakfast, we might take a quiche or a bag of bagels.

We try to keep it pretty simple when we go to the beach. The less kitchen time, the better.

Well, if no one else is going to cook I would say make what you want and if some of them are picky, THEY can cook what they want. It's your vacation too.:thumbsup2

As for suggestions for food, cheese, crackers, salami, fruit (grapes, etc.), a pot of soup, make a lasagna or other pasta dish that can easily be warmed up individually.

I agree with the bagels, fruit, cereal for breakfast, maybe one day make pancakes and bacon (get the precooked bacon) or do an overnight egg bake dish.

Also have bread, peanut butter, jelly on hand for the kids or for quick, easy snacks.
