If you like characters and do not want to go the route of CRT, and if you are near MK, it could be fun to celebrate your birthday with Cinderella's always charming (and very eligible) stepsisters

... and of course, Cinderella and Prince Charming at
1900 Park Fare, a buffet dinner. If you wore the official Happy Birthday pin and/or some ears, I think you would get some wonderful birthday interaction and attention.
We met Anastasia and Drizella for the first time last October. Their crazy comedy with the stepmother is priceless, and they have great guest interaction; they are two of the funniest characters we've ever spoken to at WDW.
If you don't mind spending a little more for your meal, I would
highly recommend
The Hoop De Doo Revue. Great show! We just tried it for our first time in October, and it could turn out to be a memorable night for you both. HDDR is a very lively and interactive saloon-themed vaudeville show, and the BBQ cowboy-type food is pretty good too.
HDDR is a boat ride away from MK, and they have a line of buses outside the theatre to take everyone to their WDW resorts or the Ticket & Transportation Center after the show.
