Need help with a low sugar dessert for Sunday

I need some advice on what to serve someone for dessert who can't have a ton of sugar and is allergic to strawberries and raspberries. My DGF is on a diet where she can have some, but not a ton.
 
How about some chocolate pudding (sugar free) with bananas cut into pieces and mixed with it and then some fat free cool whip on top. It is so good and low on calories.

Great idea. Here is the rest of the menu

Uncle Bens Roasted Chicken Flavored Rice
Diced Chicken Breast
Broccoli
Some kind of drink (water, soda, etc)
Dessert
 
Something else I was think about as maybe doing a sponge cake and some lite cool whip.
 

Peach Crisp

Canned Peaches in their natural juice-DRAIN THE JUICE (2 large cans)
Splenda
Cinnamon
Nutmeg
(pumpkin pie or apple pie spice will do just fine)
2 tablespoons of butter-melted
1 tablespoon flour

Mix all of the above together in bowl then
Put all of these in a small 9x9 greased pan season to taste..

Top with the following.

1 cup flour
1 tbls cinnamon
4 tablespoons Splenda .. brown sugar sweetener is hard to find-sometimes but is GREAT to use instead of the Splenda
1/2 cup butter
1/2 cup chopped pecans/walnuts personally I like lots more nuts.. about 1 cup for me.

Mix together until it is in small bits
Put on top of the peaches
Bake at 350 until golden brown- about 30 minutes

Serve with a little Sugar Free Cool whip, fresh whipped cream is very good...
or a bit of ice cream.


I have played around with this recipe... but you can add more Splenda and more spices if you wish
 
How about some cantelope with light cool whip?
 
A flourless dark chocolate cake is very low in sugar and very easy.

Can be prepared in 45 minutes or less.

4 ounces fine-quality bittersweet chocolate (not unsweetened)
1 stick (1/2 cup) unsalted butter
3/4 cup sugar
3 large eggs
1/2 cup unsweetened cocoa powder plus additional for sprinkling


Preheat oven to 375°F and butter an 8-inch round baking pan. Line bottom with a round of wax paper and butter paper.

Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate.

Dust cake with additional cocoa powder and serve with sorbet if desired. (Cake keeps, after being cooled completely, in an airtight container, 1 week.)

Makes one 8-inch cake.
 
This one is easy and I've also made it with lemon pudding instead of chocolate for a diabetic friend:

Chocolate Eclair Dessert

24 low-fat graham crackers
2 small sugar free vanilla instant pudding
3 cups skim milk
1 (12 oz) fat-free Cool Whip
1 small sugar-free chocolate instant pudding
1 1/2 cups skim milk

Place 8 crackers in bottom of 13 x 9 inch pan. (double cracker)

Mix vanilla pudding and 3 cups milk; let set 2 minutes. Gently fold in cool whip pour half on graham crackers. Top with another layer of crackers. pour remaining pudding over crackers. Top with last 8 crackers

Mix the small chocolate instant pudding with 1/1/2 cups milk let set 2 minutes spread over top layer of crackers.

Chill 6 hours or over night to soften crackers.

Serves 18 - Diabetic Exchange = 1 bread/starch, 1/4 milk
 
here ya go...not my recipe, but i've made it and it's REALLY easy and REALLY good!

SUGAR FREE LEMON ICEBOX PIE
1-12oz light Cool whip
1 large box SF instant vanilla pudding
1 tub crystal light lemonade
2 c. skim milk
1 t. vanilla flavoring
Mix well, pour into graham cracker pie crust, and refrigerate until ready to serve.









 
Here's a 3 layered dessert.

Crust:
1 3/4 cups four
1 1/2 sticks butter, melted
1 cup chopped pecans.
Mix well and put in 9X13 pan. Bake 350^ for 25 min. Cool completely

8 oz cr. cheese
1 1/4 cup splenda
1 cup cool whip
Mix and spread on crust

3 oz vanilla pudding sugar free
3 oz pistachio pudding sugar free
3 cups milk
Mix each pudding with 1 1/2 cups milk. Then mix together gently. Spread on top of cream cheese layer. Refrigerate.

This is a great light summery dessert. My family loves it.
 
WOW thanks everyone. I went with the sugar free pudding idea and fat free cool whip because if we decide not to do a dessert at all, this can keep until a later date. However since she is going to be over here ofton, I will keep all of these.
 
Just FYI, Cool Whip now comes in sugar free and it ain't bad. I'd rather have the sugar free than the fat free version

ETA: I think it's very, very sweet and thoughtful of you to consider her dietary needs like this. When dieting, we need all the support we can get. :goodvibes

Actually she brought over the cool whip the last time she was over and never ended up eating the dessert, so I took it to work and forgot the cool whip. Instead of chips and that kind of stuff for us to snack on, I got dill dip and carrots.

As far as taking into consideration her dietary needs, I love her very very much and want to do whatever is best for her even if that means eating a little differently when she is around. Maybe this whole thing will make me start eating better myself.

But boy is healthy food expensive.
 
Fat free Cool Whip, fat free yogurt...pick a flavor she would like. Mix them together, put them into little individual pie crusts (at our local grocery, they have them 6 or 8 to a package in the baking aisle near the pre-made pie crusts...they are about 2-3" around). Garnish with a slice of corresponding fruit (if I use peach yogurt, I do a peach slice, strawberry yogurt..a strawberry slice).

Very quick, easy and tasty. Not a lot of fat or sugar.

LOL - I think it's the opposite. I spend half on my groceries than any of my friends and they think we're the weirdo health food nuts of the world!
 
I have to agree, eating healthy is much more expensive but oh so worth it. Because of my weight loss surgery we've had to totally change the way we eat and Dh is learning to love fresh fruits and veggies, grilled meats and sugar free desserts :thumbsup2

I clicked on the thread to add a dessert, but when I saw this recipe I had to copy it. DS loves the flourless dark chocolate cake from a local restaurant, so thanks, mcnuss!

And now for my addition to the recipes, one of DS's favorites also (and he's not diabetic, DH and I are).

Double Chocolate Sugar Free Pie

1 small box sugar free milk chocolate pudding
1 small box sugar free white chocolate pudding
milk, as directed on the pudding mix for pie
1 tub whipped topping (regular, fat free, lite, sugar free...for my diabetic diet any are considered a freebie)
1 9 inch pie shell (I use the frozen pie shells that I have to bake)

Bake the pie shell and allow it to cool.
Prepare the pudding as directed on the package for pie, white chocolate first, pour into pie shell.
Prepare the milk chocolate pudding as directed, and pour on top of white chocolate pudding.
Top with whipped topping.
Refridgerate to let it set up better and serve.

Before the new white chocolate pudding came out I just made it with one large box of the milk chocolate, but DS tried it with the white chocolate at my dad's and loves it.
