Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate.
Dust cake with additional cocoa powder and serve with sorbet if desired. (Cake keeps, after being cooled completely, in an airtight container, 1 week.)
Makes one 8-inch cake.
I clicked on the thread to add a dessert, but when I saw this recipe I had to copy it. DS loves the flourless dark chocolate cake from a local restaurant, so thanks, mcnuss!
And now for my addition to the recipes, one of DS's favorites also (and he's not diabetic, DH and I are).
Double Chocolate Sugar Free Pie
1 small box sugar free milk chocolate pudding
1 small box sugar free white chocolate pudding
milk, as directed on the pudding mix for pie
1 tub whipped topping (regular, fat free, lite, sugar free...for my diabetic diet any are considered a freebie)
1 9 inch pie shell (I use the frozen pie shells that I have to bake)
Bake the pie shell and allow it to cool.
Prepare the pudding as directed on the package for pie, white chocolate first, pour into pie shell.
Prepare the milk chocolate pudding as directed, and pour on top of white chocolate pudding.
Top with whipped topping.
Refridgerate to let it set up better and serve.
Before the new white chocolate pudding came out I just made it with one large box of the milk chocolate, but DS tried it with the white chocolate at my dad's and loves it.
