We had ressies for 1900 Park Fare last August for breakfast. They were renovating so the breakfast was moved to Grand Floridian Cafe. It was a wonderful experience. Everyone was served the same breakfast. One of the items was a "stuffed french toast". It kind of reminded me of Tonga toast but it was served with a chocolate dipping sauce.
Does anyone know the actual name of it and if there is an official recipe?

This is for the Grand Floridian Cafe, right?
I see:
Maple-Vanilla French Toast - challah bread dipped in maple-vanilla flavored batter with bacon or sausage $10.99 on AllEarsNet's menu.

This also slightly resembles your description, but it is a croissant, not french toast:
Stuffed Croissant - with Mascarpone cheese, chocolate chips and toasted walnuts served with raspberry sauce and whipped cream $12.99

It was definately toast because I remarked how HUGE the slices were. I don't remember there being a maple flavor as I am not a huge maple fan. It kind of sounds like a cross between the two!
I should add that it was stuffed with bananas and some sort of sweetened creamy something!
I have a picture of it, lets see if this works....
