I found a receipe for fudge that I can covert to make for my granddaughter. She is allergic to wheat and diary. The receipe calls for evaporated milk though. I was hoping there was a way to convert the soy milk to work. Does anyone have any experience with this or suggestions?

I have a cousin who uses soy milk & know she makes a number of adjustments to recipes when using it. DDIL does also, but she isn't home just now. I'll check with her later & post if she has any other ideas.

I found this info (good old Google) that may be helpful:
"Soy milk tends to be on the sweet side, so you might leave out a bit of sugar, for instance. You might also increase the spices slightly to hide any off-taste from the soy milk. Finally, evaporated milk is thicker than soy milk, so a straight substitution may produce a filling that is runnier than you want. You might start out adding a little less soy milk than called for in the recipe, and increase it bit by bit if necessary until you get the right consistency."

Here's a site that might be helpful with some other substitutions for allergies:

They have a different idea instead of using soy milk. "Dairy - Evaporated Milk 1 CUP LIGHT CREAM ALTERNATIVE OR DAIRY FREE COFFEE CREAMER"

Evidently that idea came from this site:

Wow, thank you so much. I never thought to go to google, yet I use it for everything else.

Thanks again,
Dee

Piratesmate, THANK YOU for the link to that site. I never even thought to look for a website with recipes for those of us with food allergies. I can't wait to get home and come up with some recipes that I can eat and ENJOY! Thank you!

I'm glad that it helped you! I know how hard it is to adjust recipes for allergies/special needs & am always looking for new ideas. DDIL has wheat & milk allergies and I'm diabetic. We would have some really boring things around here without substitutions. ;)
