Will he be teaching special ed? If so, has he taught at all yet? If not, you can get him gifts that have to do with that.
Like books about what it's like to be a teacher, lesson plan ideas, etc.
Plus you could get him things for his desk at work like a really nice engraved photo of the two of you, and if he is a Disney nut you could get him this thing I saw at hallmark. It's like a little sign for your desk that says, "If you can dream it, you can do it" -Walt Disney. Little things like that would be nice I think.
If you want to get him more or something bigger you could get tickets to his fav teams game. I know my DBF would LOVE if I get him Jets/Knicks/Yanks tickets.
Seems like there's a lot to do with his interests, you also have golf and jeep working for ya...shouldn't be hard to come up with someting
