Need experts advice - 10th Anniversary Planning

Hi,
I'm trying to plan our 10th Anniversary trip. My wife and I went to WDW for our Honeymoon (her first time at WDW) and our 1st Anniversary, stayed at the WL. We now want to go back with our 1yr old and 4 yr old, and I am trying to plan a surprise trip for all of us. Anniversary is Oct 15th, but the crowds have picked up then and we've gone in Sept (week after school started, and loved the low crowds). So we're looking at Sept 11-18 2004.
My questions are:

1 - What resorts offer two rooms? We'd love to be able to have the kids in one room, us in the other. I couldn't book any of the Villas (all filled up), and can't seem to get any of the suites offered when booking at waltdisneyworld.com.
2 - We'd like to try a different resort, and have heard good things about AKL and YC and BC (great pool). How are the rooms at these hotels?
3 - I really want to go all out, since you only get one 10th anniversary, so any little tips/tricks/discounts are appreciated, I was disappointed after getting the Disney Rewards card that you could only book up until 6/21/04. Do you know of any other offers coming in the next couple of months?
4 - We want to do the Cinderella's castle breakfast again (daughter loved that one), what other Character meals do you reco?

We have been there for our first, 10th and 20th anniversary, not to mention a dozen or so other times. One resort you might want to consider is the Dolphin. For some reason I seem to remember there might have been connecting rooms there. You can walk to either EPCOT or MGM from the Dolphin, the Boardwalk is just over a bridge and a mini-golf course ir right across the street. Send me a regular e-mail if you have other questions, but we loved the resort.....
 
You could look into renting points from a DVC owner. This way you could rent a 1 or 2 bedroom villa at the BCV or BW either place and your kids should love the pool.
