Some "boil-in-bag" rice and beef tips. You can get the beef tips precooked in the refrigerator section of the grocery. Hormel (& others) make them. They are designed to be cooked either in the oven or microwave. However, we boiled them with the rice on our last campout. The meat/gravy is sealed in a sturdy plastic bag. There are other varieties as well - Salisbury Steak (not a big hit with my gang); Enchaladas & a few others.
Frozen Skillet dinners work well also.
We even boiled our canned veggies right in the can (without opening it) - remove the label and place it in the boiling water (separate pot from the boil in bag rice due to the glue on the can). A set of tongs comes in handy for removing the hot bags/cans from the boiling water.
Added bonus: minumial clean-up!
