Need easy camping recipes asap!

Hi--My DH has decided that during my recuperation from being in the hospital that he is taking me to the campground in the pop up :confused3 we bought last year and havent used for 5 days starting Thursday :sad2: . Well I need easy recipes that can be cooked on a propane type small cookstove or over an open pit---any and all suggestions will be appreciated, preferably VERY easy as I still have some mobility issues.thanks a million!
 
breakfast is easy....bag omlets...get ziplock baggies...add egg, cheese, seasonings, milk/water..which ever you prefer...mix in the baggie....then boil water add baggie until done...yummy with salsa and sour cream.


You might want to do a search I know either on this board or the CB there was a thread on this some time back.

Good luck and I hope you do get a chance to recuperate!

If you have pie irons you can make just about any kind of sandwich you want. We've put sloppy joe stuff in them, fajitas (using tortillas instead of bread) just make the stuff ahead of time. We made pizzas the most though. Get the squeezable pizza sauce, shredded cheese, pepperonis, etc...

I second pie molds. Not only because my dad MAKES them....but because they are easy easy easy and GOOD! :)

we also love pizzas. cherry pies are great. we cooked them in our backyard last week and the kids had fried eggs and scrambled eggs.

You can make anything you make at home on a campstove. We've done soups, spaghetti, etc. And anything can pretty much be done over an open fire that you would do on a stove (if you have a grate) and anything in foil in the coals as long as you watch them. I wish I had specific recipes but I don't. I use my campstove for everything - that's the major place I cook. I second the pie irons.

An idea if you are going to do anything with ground beef - cook the beef ahead of time.

If you are going to do anything with potatoes - like make them for breakfast or use them in foil pouches - cook a bit before you go - makes them cook easier using a bit less time. I make baked potatoes on the grill and I usually cook them 45 minutes before placing the meat on and then flip them and let them cook the rest of the way while the meat is cooking.

I had made a big pot of chili once, and warmed it up for dinner. If you don't mind the canned chili, that would be fast and cook up some hot dogs to go along with it. You could just bring some dinner rolls or cornbread for the meal also.
Stir fries-just chop up your veggies ahead of time and put them in a baggie. Bring along your stir fry sauce and just add it in.
 
Eat from a bag of Fritos -- cut open the side of the bag to make your bowl. Brown hamburger at home before you leave (make DH do it for you!) so that all you'll need to do is add taco seasoning & water to warm it up. Top with cheese, lettuce, tomatoes, . . . . . YUM! (It was a real hit at GS day camp last week)

I bring tons of aluminum foil - pop anything in a little packet and you're ready to go! My favorite camping dessert (besides smores) are sliced bananas with chocolate chips wrapped in a foil packet. Cook until the chocolate is melted. Yum, yum!
 
to add marshmallows and peanut butter chips to those bananas and chocolate chips! YUM!

Another thought for the pie irons--we used to make french toast in our's. Comes out nice and thick and yummy. You do have to cook it slowly so it cooks all the way through. My kids always got the biggest kick out of making their breakfast this way. Though we don't camp anymore (kids are 21 and 17), we are using our pie iron in our fire pit in our backyard. Makes me feel like we are camping and sitting around a big fire!

Just wanted to thank everyone for the ideas--I actually used quite a few! The walking tacos were quite a hit and I ended up feeding my crew which ended up at 14 ppl and the people in the next site over and EVERYONE loved them. I really have to thank you for the omellette idea in the ziplock--talk about simple! I made a few meals with the precooked potatoes and added all kinds of stuff to the foil--big hit was I put smoked sausage and veggies in one and then melted velveeta to put on after--OMG IT WAS EXCELLANT! We tried the smores with choc and peanut butter, they were yummy! I need to get me one of those pie irons also! Thanks everyone!
 
My favorite meal it grilled chicken over the fire, with foil-wrapped veggies. Make a foil bag(I double it, if I don't bring the heavy-duty foil) and put cut up squash, tomatoes, onions, peppers, mushrooms, and seasoning inside. cook it for about 20 min on the grill, turn every 5 min or so. I also take my electric skillet with us and have stir fry at least once. If you are planning to have chili or spagetti, make it ahead so all you have to do it re-heat. Grilled burgers are always a hit. I cook plain food when we're camping.

Don't worry about camping during your recovery. We did the same thing after my DH had lung surgery, with oxygen and everything. He said he could be sick at home or up in the mountains,and he chose the mountains. Take it easy while you're there and rest a lot. You'll be fine.
 
Another good one similar to Walking Tacos is using chili over the corn chips and adding cheese. We had these at Pumpkin Fest a few years ago and they were a great fall food. These are so easy to take camping as everything can be made and cut up before you go and you are set.

bskts4bj - I heard those were a hit at your day camp (I know Lisa B. who is a leader and TSC and she mentioned them at a cookout we were at).
 
You know Lisa! She & I co-TSC'd North for a couple years, she's a great lady. Yes, I wanted to do the chili ones instead, but too many people said the kids wouldn't like the beans. Would've been much simpler than browning 52 POUNDS of hamburger ahead of time -- I don't want to see or smell hamburger again for a LONG time!

I tried another trick at camp for banana boats -- instead of leaving them in the peel, I sliced the bananas into a foil pan, added marshmallows & chocolate chips, covered with foil and baked them casserole style on a grate on top of the fire. Worked very well!

Here's an idea for next time - do chili without beans. Or if you do any fall camping it might be a fun thing to try.
