Need dairy free ideas for Christmas Dinner

I'm having my friends over for dinner either this Friday or Monday night (we're still working out our schedules). I'm usually very good at planning menus, but I'm totally blanking this time around. I'm also hampered by the fact that one of my friends is allergic to all dairy products. So the main dish must be dairy free (no cheese, butter, milk or cream). I can have a few side dishes with dairy, Jen doesn't mind if there are a few things she can't eat. But the main dish has to be okay for her.

My only idea was pasta (anyone that wants cheese can add it themselve) but I don't know if that's what I want to do. Anyone have any ideas? This is to be a sit down dinner with 5 people, so the amount of food doesn't need to be huge.
 
I don't know your budget, but how about a prime rib or a beef tenderloin? Very easy, lots of WOW factor, and no dairy (but pricey).
 
There aren't too many dishes that can't be made dairy free. You can substitute Rice Dream or Soy Dream for any milk. No, I wouldn't want to drink a glass of soy milk but when you add it to mashed potatoes, you will never know the difference. For cheese, I like soy cheese over rice cheese. There are also plenty of things that don't require any dairy in them so you don't need to substitute anything. Pasta is a good choice. Most fish or meat dishes would work. Salad, rice and a veggie for sides. I use Rice Dream in all my cakes, brownies, etc. My banana bread recipe doesn't call for any dairy.

You can use chicken broth in mashed potatoes. There are some very good soy margarines available.

My favorite Christmas meal is roast beef, mashed potatoes & veggies. Or if you don't want to mash the potatoes, you can roast them in the pan with the meat. I really like that too. If you have a BJ's or Costco nearby, they have really good roast beef for a reasonable price. We usually get 2, make one medium, one well done & everybody's happy!
