My DD, SIL and SIL's father and friend are running in The Disney Marathon. I need pasta recipes for the night before - no meat, cheese or butter.

Also need ideas for the night before the night before the race - also low fat - i.e. a good recipe for grilled chicken.

I was all set to type up a great recipe I have for pasta with broccoli, till I realized that it uses butter.

Are you looking for recipes with NO butter at all? That may be a little difficult. I wonder if there's a web site with recipes for athletes??

And as far as grilled chicken -- I usually either buy one of those 30-minute marinades (we especially like the ginger/sesame one) or just sprinkle the chicken with seasoned salt and pepper before grilling.
 
Is it okay to use olive oil instead of butter? Or is it literally NO FAT? I've never had anyone run track in the family.

One of my favorite pasta dishes is Angel Hair in Garlic & Oil. It's a lot like a White Pizza. My kids always want to put Parmesan on it, but I like it just that way.

Another thing that comes to mind isn't what you usually think about when you hear "pasta". But since you can make without a bunch of meat so that the main ingredient is the noodles, I think this would count.

Great-Grandmom Barnes’ Potpie
chicken or turkey bones
4-6 c water
4 tsp chicken bouillon
4 carrots, chopped
3 ribs celery, chopped
3 potatoes, cut in chunks
1½ tsp celery salt or powder
1 Tbl parsley
2 eggs
1 c milk
2 tsp salt
1½ Tbl baking powder
flour
Cover bones with water, bring to a boil & then simmer at least 1 hour. Remove bones from water. A veggies & spices. Simmer until veggies are tender. Add any remaining chicken or turkey, cut into pieces. Combine eggs, milk, salt & baking powder. Add flour until a dough forms & can be rolled out. Roll out thin & cut into squares. Drop in boiling broth. Boil 20 minutes. (Less bouillon is required if using chicken pieces instead of bones.)

[That's the original recipe - but you can stop at the underlined ingredients & use store-bought noodles such as Mueller's Bot Boi square noodles. (~2 or 3" square - although I guess ANY shape would do.)

For grilled chicken my favorites are:
Rosemary Chicken
4 - 6 chicken breasts
5 cloves garlic, minced
2 tsp rosemary, fresh or
1 tsp rosemary, dry
1 Tbl dijon mustard
1 Tbl lemon juice
2 Tbl olive, oil
¾ tsp salt
¼ tsp pepper
1 tsp lemon rind (opt)
Mix & coat chicken. Marinate ½ to 4 hours. Bake or grill.
[You can skip the oil or cut it down if you want. I use this on boneless, skinless breasts, but it would work for bone-in also.]

Triple Citrus Chicken Breasts

6 skinless, boneless breasts
1 tsp grated lemon zest
1 tsp grated orange zest
1 clove garlic, peeled and minced
1 Tbl chives, chopped
1 tsp salt
¼ tsp black pepper
3 Tbl fresh lime juice
2 Tbl fresh lemon juice
1 Tbl honey
1 tsp balsamic vinegar

Combine all ingredients & pour over chicken which has been placed in a Ziploc bag. Marinate 2 - 24 hours. (I usually freeze this recipe & let it marinate as the chicken defrosts.)
 
This is a very easy recipe for grilled chicken. The combination of the flavors is light and tasty.

Fresh Garden Chicken

Brushing sauce: 1/2 cup of salsa
1 tablespoon lime juice

Vegetable sauce: 1/2 cup of mild salsa
1/2 cup finely chopped cucumber
1/4 cup chopped green pepper
1 tablepoon chopped cilantro (you'll find it with the parsley in the produce section)
1 tablespoon lime juice


You can adapt this recipe to how many you are serving. Basically, grill your chicken (skinless breasts is what I use). Baste with brushing sauce the last few minutes of grilling. To prepare vegetable sauce just combine those ingredients to just to boiling , remove from heat until serving. When chicken is done spoon vegetable sauce over chicken.
 

I make a pasta and broccoli, which my family loves:

Cook 1 lb. pasta, drain and return to pot. Meanwhile Cut up 1 bunch broccoli, put into a microwave dish, add a small amount of water, cover and cook in the microwave until done. Drain broccoli. In frying pan, saute 1 or 2 crushed cloves garlic in olive oil then add the broccoli and continue to saute, mixing continuously, on med-high heat for a few minutes. Add the broccoli to the pasta, add a little olive oil, mix well and serve with grated parmesan cheese.

If you really can't have any cheese, skip the parmesan.
 
Wow, Twigs, your pasta and broccoli is very similar to what I make. Only I use butter instead of olive oil, and add some wine to the mixture after adding in the broccoli. :eek: Your version definitely sounds healthier than mine. ;)
 
These are just wonderful - just what I needed.

On Friday I am going to serve chicken AND the brocoli pasta. On Saturday I am going to serve pasta with marinara sauce (daughter's request - one version without meat). On Sunday (race day) we are going to have a barbque for about 18 people. I have mentioned this before but I get a Sadler's smoked brisket from Sam's Club (in the northeast they only carry it in the summer and here in Florida not all Sams Clubs have it - cover it in bottled barbeque sauce and grill over very low heat for about 3 hours. I will serve tex-mex dip, coleslaw, fruit salad and the following potato recipe which everyone loves.

Mix 2 pounds frozen hash brown potatos, 1/2 cup melted butter, 1 tsp salt, 1/4 tsp pepper, 1/2 cup chopped onion, 1 can cream of potato soup (can use cream of chicken soup), 1 pint sour cream with chives, 1/2 cup chopped celery. Put in greased 9 x 12 casserole dish.Sprinkle with grated cheddar cheese. Bake 45 minutes at 350. Serves 16.
