Need another buffet dish

We are thinking of doing a Mexican themed buffet. We have come up with some dishes to put to our planner but I think we need another main dish.here is what we have so far:


Shrimp, Tomatillo, Toasted Cumin, and Fire-roasted Corn Chowder

Quesadillas

Queso fundido

Yucatan Fried Rice with Grilled vegetables

Chilli*

Build your own Creation:
Chicken Fajita and Beef Taco Meats
Flour Shells, Tortilla Chips, Nacho Cheese,
Lettuce, Cheddar Cheese, Sour Cream, Salsa,
Guacamole, Olives, and Jalapeños

Jalapeno Cornbread *and Cilantro Butter


Any suggestions would be really helpful

What about cheese enchiladas? They could be a good vegetarian option as well.

How about something casserole-y, like chilaquiles or cheese enchiladas? The Mexico booth at the Food & Wine Festival a few years ago was serving amazing chilaquiles, and I think the recipe is in the official F&W cookbook.

Another idea might be to serve carne asada with various accompaniments—people always like steak....

Cheese Enchilada would be good for veggies- is there going to be chips/salsa/guacamole? If not, I would add that!

Bean & Cheese Burritos are good for Vegitarians too, my middle DD would live on them if I let her!

I second the chilaquiles from the Food and wine festival Mexico booth. They are AMAZING!

Maybe a rice and chicken dish, like an arroz con pollo?

Thanks for the suggestions! I will look into all them! My Mexican knowledge is fairly limited due to lack of Mexican restaurants here so your input has been really helpful
