Need all the help with a cheap and cheerful trip

We are planning a trip to Florida and of January - Beginning of February 2019

1 adult for sure (maybe 2, trying to figure out husbands vacation)
4 kids - 1 Disney adult, 1 kid, 2 free

Driving down

Thinking staying off property

I am searching and looking for advice to be able make wonderful memories but as cheap/frugal as possible.

Thank you for any advice you can share!
 
We love staying off property, as we tend to do a whole day at the park at a time. Then go home, maybe stop at Publix for a chicken, loaf of bread, lettuce and tomatos... chicken sandwiches and salad for dinner. Then into our private pool to relax. I love that all the kids have their own space and the game rooms are private. Some rentals are also part of a community club and have game rooms and bigger pools, but that's too far to walk after a day in the World, lol.
 
Check out Airbnb or Vrbo for vacation rentals. Usually publix or wal mart nearby to handle food needs.

A kids meal can feed an adult for lunch. An adult meal can probably feed two kids. A la carte options are sometimes not advertised.

We just got back a week ago from a Disney Water Parks (only) trip to Orlando. Many things are still fresh in mind as to how we kept costs down, but rather than going into details about our driving trip and where we stayed, I figured that I'd better not make any assumptions...

I am looking at off property with a private pool. I want to be able to put the little ones to bed, and then still swim with the older kids

driving down, staying off property but haven't booked yet, I am switching between 2 dates a week apart
