Need advice on ADRs

I am only 10 days away from the 180 day mark and can't figure out where to eat. When we went last year I didn't make many ADRs and the ones I made were for lunch which turned out to be a pain to get to. We ended up eating dinner almost every night at Roaring Forks and I got so sick of it. If I never eat there again it will be too soon.
My party consist of myself my best friend and his 2 sons ages 11 and 8. Most of these choices come from their request. Any opinions or advice would be greatly appreciated.

We will be on the dinning plan and I know I have 2 too many TS meals plan but I will probably pay for those I just haven't decided which ones yet. I thought we would just figure out lunch as we go along. Is it possible to change an ADR the day of it if we decide we want something different or is that impossible now with the dinning plan because everything is always booked in advance?
I have also thought about Alfredo's and Le Cellier but I wanted to fit in what the boys wanted to do. It is just so hard to decide what you want to do 6 months in advance.

I would not have a lunch and dinner both on May 25. We made this mistake on our first family trip by scheduling both lunches and dinners. We found we were never really hungry at dinner time. We now have a large breakfast, snack for lunch, and dinner.
Especially since you have lunch at the 50's Prime Time. This is one of our favorites. Great fun and really good food with large portions. Unless your lunch is 11am I doubt you will be hungry at dinner time. Also, H&V back in June was a BIG disappointment. We had eaten there in the past and always enjoyed it. But in June my DS (15) and I could barely find anything we could eat.

My only other advice is to plan your meals around your theme park visits. I know what you mean about trying to get to your dining reservation being a pain. Again, on our first trip, we made reservations all over only to find they were not always easy to get to. We now plan meals and theme parks together. I see you have Kona (another favorite or ours) on your schedule. Make sure you do this on a Magic Kingdom day so you don't waste time travelling.
 
I'd go with the assumption that you won't have much choice with regard to making changes the week of your trip. Some of the restaurants on your list will almost surely be filled, much of the day, so switching around would be a hit-or-miss kind of thing.

Some people like Alfredos -- almost everyone else doesn't. I pride myself in having visited almost every full-service restaurant Disney offers, and the criticisms of Alfredos have been so convincing to me that that's the only one that I won't bother trying. That's all I'll say about that.

We are doing both lunch and dinner on the 25th because it is the older one's birthday and he wants to eat at 50s Primetime Cafe and see Fantasmic. Since I refuse wait in line for hours for Fantasmic we are having an early lunch (11:00 am)and then doing the dinner package for Fantasmic. I want to get the last seating possible since the show is at 9:00 that night We chose H&V even though it has gotten bad reviews because the boys like buffets.
We are splitting our stay between the Poly & WL. We are eating at Ohana's and Kona Cafe while we are staying at the Poly and WCC while we are staying at the WL. I did them on nights that I couldn't figure out what theme park to go to.
