need a main dish please

So I received an email last night that I need to send DD16 with a main dish to her marching band review this Saturday, it needs to be something I can send in a disposable pan, something that will feed 8-10 people and something that DD can make because I have no free time to do it. I work M-F 8-5 and I also work nights this week I have M-W-F shifts for the night job. I was thinking just something like pasta with marinara sauce......
 
The baked ziti recipe that is on the back of the ziti pasta box is always a winner in a situation like this! I always add extra sauce and extra mozz to keep it from getting too dry.

Stouffer's lasagna or other pre-made frozen dish?

Or how about little ham sandwiches with silver dollar buns and shaved ham?

How about just stopping by your local chinese take out place and picking up a few quarts of fried rice and something else like General Tso's chicken? I belong to an organization that does several pot lucks a year, and one gal always brings the fried rice/ general Tsos and she puts it on a big disposible serving dish and everyone LOVES it.

By the same token, we also have someone who brings a bucket of chicken from KFC or a dish of buffalo wings from one of the local bars. Both of those are popular as well.
 

If you are looking for something different...(not sure if a lot of people are bringing pasta), she could make Jambalaya. Zatarains mix is very good and easy. I just add a sliced kielbasa and one package of Purdue Shortcuts Chicken after the rice cooks. Feeds a ton too.

Banquet Skinless Fried Chicken is good too. Just heat it at home first...already cooked. Can be served cold or room temp. Buy some col slaw to go with it and you are all set.

I always make baked ziti, the kids love it and it super easy. It's always gone at the end.

This is a great idea, I had considered it as well but I think I might try to make this a learning experience for DD. lol Plus we have some parents who make this type of thing from scratch so I'm not sure if someone else has this covered already. If all else fails this is option #2. :) thanks!!

All the sides, drinks and desserts are being brought by other parents so I just need the main dish. Do you all think if I did have her do the baked Ziti it would taste OK cold?
 
If you need something that tastes great cold - This recipe is for a Shrimp and Pea Salad. Super easy to make - Personally because I do not like soggy lettuce - I would keep the shrimp mixture in a ziplock bag until serving time. And - I would dice the onions instead of cutting them into rings.

Shrimp and Pea Salad

Kind of an entrée, kind of a salad, and, supposed to be cold.
 
This is what I call fake Lasagna

One package egg noodles cooked.
Hamburger browned. You can cook it with onions and or add bell pepper if you want.
2 jars pasta sauce
grated cheddar cheese.

Mix all ingredients except cheese. You will not need all the pasta sauce. I use about 1/2 of the second jar. Pour into greased 9"x13" disposable pan. Top with cheese and cook till heated through.
 
Baked Rotel Chicken:

It's a layering recipe

layer a baking dish with Chile con carne fritos
boiled chicken and then shred it.
Layer over the fritos.
Dump 1.5 -2 cans cream of chicken soup on top.
Top with a layer of velveeta.
Drain a can of rotel and layer on top of everything else.

Bake at 350 for 30 minutes.

Easy, cheap and quick. My family loves it!
 
Easy elbow pasta bake

chopped meat browned
diced onion
can of puree tomato sauce
1 lb shredded mozzarella
1 lb shredded extra sharp cheddar
1/4 cup grated parmesan cheese
salt and pepper and garlic powder

brown the meat with the onion and S & P - drain, while boiling the pasta

in the tin add the meat, pasta, sauce and all but one cup of mixed cheeses. mix well and top with remaining cheese. cover with foil and bake for 40 minutes @ 350 - uncover the last 10 minutes to brown cheese.

serve with garlic bread - really tasty!

No, don't serve ziti cold. I would go with the suggestions that are meant to be served cold. Grilled Chicken Caesar Salad is a good one.
 
Some of these sound so good that I think I'm going to make them for us! LOL The main issue with this is there will be no way to keep foods hot or cold, I think that's why I'm struggling so much. I have to tell them tonight what she's bringing. I thought about fried chicken but wasn't sure how much to get to feed 9-10 people, I usually do 3 breasts for the 4 of us.....hahaha If I do the fried chicken I'd rather do whole chicken pieces actually fried (think KFC) then just breasts.

If I were going to do this, and make it myself, I'd just buy a big package of drumsticks...they are a better size than breasts for people eating at a potluck AND they are cheaper ::yes:: If I were buying the bucket at KFC, I'd but whatever size bucket was the sale one

Frozen corn (I throw them in with the pasta to cook)
Quartered grape tomatoes and cucumber slices
Cubed pepperjack cheese
Quartered pepperoni (optional)
3/4 jar of Italian dressing
I make it the night ahead, and then just before we leave the house I add the other 1/4 of the dressing so it's nice and moist.

I thought of this as well but I ultimately decided to with the fried chicken. My original plan was to make it at home (actually in the oven lol so not really fried) but I have to work my day job until 5 then again tonight at 9 for my night job so I think I'll just get KFC or something like that. I'll just put it in the fridge tonight so it's easy for her to take in the morning.
