Look for fish dishes-i spend two weeks in italy and ate pasta twice and red sauce not at all-however i did have brazziano ( seabass) prawns, tuna, scallops, and cod i various forms. No recipies handy but google is your friend.
You could do an antipasta? Lettuce, peppers, tomatoes, olives, cheese, deli meats, chi chi beans and if you do just a simple oil and vinegar it doesn't have a lot of sugar in the dressing either...
