Need a great lemon bar recipe.

My mom used to make the best lemon bars.

She now has stage 4 cancer and her mind is slow fading away, so she doesn't remember the whole recipe. :worried:

She remembers the crust had like flour, powdered sugar, butter? And she used the lemon juice in the bottle instead of fresh lemons.

Anyone have a recipe similar to this?
 
Here's my grandma's recipe. They come out great every time! She always used the lemon juice in the bottle.

Lemon Bars

1 1/2 cups all purpose flour
2/3 cup of confectioner's sugar
3/4 cup butter or margarine softened
3 eggs
1 1/2 cups white sugar
3 tablespoons all purpose flour
1/4 cup lemon juice
1/3 cup confectioner's sugar for decoration

Preheat over to 375 degrees. Grease a 9 x 13 baking pan.

Combine 1 1/2 cups flour, 2/3 cup confectioner's sugar and butter. Pat dough into prepared pan. Bake for 20 minutes in preheated over, until slightly golden brown. While crust is baking, whisk together eggs, white sugar, 3 tbps flour and lemon juice until frothy. Pour this lemon mixture over the hot crust. Return to preheated over for an additional 20 to 25 minutes, or until light golden brown. Cool on wire rack. Dust the top with confectioner's sugar. Cut into squares.
 
We have our own lemon tree and there's really no comparison between the fresh and the bottled! Also, we did a side-by-side taste test with lemon squares made with butter and some with marg. Again, no comparison. No buts, it has to be butter!

dash salt
2 c flour

Combine ingredients; mix well. Press into 9 x 13" pan, leaving 1/2" rim. Bake at 350F for 20-25 min til brown.

Filling

4 eggs, beaten
1/4 c flour
2 c sugar
1/2 c fresh lemon juice
1/4 tsp grated lemon rind

Combine flour and sugar. Mix in beaten eggs and lemon juice. Pour over warm crust. Bake at 350F for 25 minutes til set.

Cool and sprinkle with sifted powdered sugar.

I believe this is it!!! I'll have to pick up a few things while at the store tomorrow and make them this week. Thank you!!

I know what you mean about using fresh lemon juice. I'm sure it makes a great lemon bar but was looking for something that tasted like what I grew up with, what my mom made. I'm pretty sure the recipe above is what she used.

Maybe one day, I will make it with the fresh lemons and see what the difference is. Thanks for your recipe. I'll put it in my arsenal of recipes :thumbsup2
