The signature restaurants in theme parks don't have dress codes. The signature restaurants at the resorts do.

Monsieur Paul (closed right now) has the same kind of dress code as Narcoosee's. Being in Epcot, though, the dress code was disregarded even more than in the other signatures.

Interesting, was that the only one? I don't think there's anything like that at Le Cellier, Tiffins, or Brown Derby.

We nearly always dress up more for dinner, certainly at Sigs, and I agree there were plenty of too-casually-clothed diners at Monsieur Paul despite its refined atmosphere.

Holy Guacamole! Just checked the Disney official menus and looks like MPaul may reopen with yet another prix fixe menu, no a la carte, at $175/adult, no kids price given. Details here: https://disneyworld.disney.go.com/dining/epcot/monsieur-paul/menus/

That scares me regarding the possible Deluxe dining plan price per day whenever it becomes available again!

$175 seems like a reasonable rate and is in line with what other fine dining restaurants charge for a multicourse tasting menu. At least from what we are used to in Seattle. If the quality of the food and service approaches French Laundry I see nothing wrong with charging that much. On the other hand if the quality of the food is in line with the other DIsney signature restaurants like Narcosees than that price is outrageous.
